Sicilian whole orange and almond cake

    I used a 8inch - 20 cm diameter flan dish with 2 inch - 5cm depth
    Orange and almond sponge
    Whole oranges 2
    Eggs 4
    Sugar 250g - 9oz
    or xylitol 150g - 5 or 6 oz
    Ground almonds 250g / 9oz
    Baking powder 1 tsp
    Spices for boiling oranges a few juniper berries, star anise and cloves
    Butter to line baking mould
    Orange slices and flaked almond for garnish
    This Sicilian whole orange and almond cake is gluten free, light and fluffy like a souffle, and it's perfect for a special occasion!
    The sweet orange flavour is amazing together with the nutty almond flavour. This cake is perfect for any occasion, and it's definitely a dessert you don't want to miss!

    If anyone uses xylitol don't whatever you do give any food with it in to dogs or cats, it takes their kidneys out very fast. Just thought I would let you know..

      @@unclemattscookerylessons tell me, do I need to grease the sides of the cake tin? Also, would fresh orange slices dampen the cake (thus making it harder to cook)? And sorry, one last question, are orange sizes important?

    Clean recipe using 2 under used ingredients that work so well together. Topped mine off with light drizzle of chocolate ganache. Yum without being too much

      Thanks, I can't promise that it's keto as the xylitol is about 40% of the sugar in sugar if that makes sense. But it's a lovely sweet treat every now and then

There is no good reasons you don't get more views unless you are being throttled or the large channels are paying google to bump them up, overwhelming smaller creators. If it makes you feel any better, and I in no way want to demoralize you, I have an acquaintance who is a semi-retired trained chef (Johnson & Wales University alum.). He and a couple other guys sunk like $100,000 and a lot of unpaid work into building a State certified commercial kitchen specifically to make cooking videos at his house. They finally gave up trying to "make it" on TH-cam'. Part time, they do event catering and production runs for local businesses now (Things like making hundreds of pies and pastries around holidays that get ordered through local restaurants and shops.). Last time I saw him he said he was doing some 'house' branded bottled sauces. I don't know just the right formula. It's a tough business. Hopefully, "the dam will break" for you. Perhaps if you wore a trans pussy hat, which would be what, a dildo chapeau? lol, the world is crazy.

    Hey, uncle Matt… what a totally delicious cake.. best bit is I got almonds from our tree and oranges from fallen fruit. Big question.. can freeze it??

      I'm glad you liked the cake. I'd say probably yes to freezing although I haven't tried as each time I've made it, we polish it off quite quickly x

      sorry for the delay in responding, the flan case I used is 8inch - 20cm diameter, and 2 inch 5cm deep. As you saw in the video this recipe made more batter so I also used a small loaf tin. I wouldn't let the size of the mould be an issue however, follow the method and if your mould is much larger and the cake is not as deep, just be aware of the cooking time being reduced. The tried and trusted skewer test still works. You could use a gratin dish also, as long as you line with parchment. I hope you give it a go, and please let me know how it turns out for you

      It kept in ambient temp for about 3 or 4 days, but usually it lasts about 1 day because we eat it straight away.

    How Keto friendly is this Matt?

      If you're actually doing proper keto I'd avoid this or cut way back on the xylitol or other sugar alternative.
      Sorry that I don't know how to calculate the ingredients that way.
      Are you doing keto, and how are you finding it?

      @@unclemattscookerylessons I've lost 8 stone in 10 months with Keto & omad and avoided treats like this but was looking into almond flour as a low carb alternative.
      You're looking great and the weight loss is obvious Matt . . .I find that Keto is the only diet that controls my hunger & overeating.

    This low in carbs cake is simply gorgeous, just be careful if you're doing keto as this doesn't qualify I think?
