This recipe is gluten free as it is made on almond meal. It is a simple recipe that promises a delicious cake, made moist by an orange syrup that is drizzled on top. Crunchy flaked almonds and a dollop of chantilly cream finish this decadent cake off nicely.

The recipe seems simple enough, Id like to give it a go, however would like to know:
- Is almond meal different from almond flour ?
- I don't have the mixing machine so can I do all the mixing using a spatula ?
- finally, you reckon the caster sugar could be replaced by maple syrup or other sweeteners ?

Almond flour is a little finer than the meal ( I have never tried it with almond flour). Yes, go ahead and do this by hand with a spatula - that should be fine! I would not try maple syrup as it is a liquid and it may affect the end result/texture. You could definitely replace caster sugar with a natural sweetener like stevia, (I have not tried this, but theoretically - it should work!)

Can these be made with clementines? About how many you think ?
I will be completely honest and say I do not know. I haven't tried myself, so the only way to know is trial and error! Have a go. In terms of size... maybe go by weight. The approximate weight of 2 large navel oranges - then go the same weight for the clementines! It should work!

Can i replace the sugar for Splenda?
I never have, but I would say so yes. Just check the instructions on your Splenda packaging, to see how it compares to regular sugar in terms of sweetness - then you can get the ratio right. Sometimes I use Stevia, and it's a 1:1 with regular sugar - so that is easy and works out just fine.
