In Guyana we add more seasonings to the dal, also we would grind the dal while its still hot because it tends to be a bit more difficult to ground when its cool/ cold. We would add hot peppers, garlic, gerrah, salt, and other blended seasonings. Its awesome. Nice to see a different way to making it. 🇬🇾🇨🇦😍

My parents are always making it and I keep saying I will make them for myself one day. Hi Shelina thanks for all the recipes. I've bought a few Mauritian cookbooks from Le Caudan when I was over there but just bought yours. Best Kalia result, and I'm having another go at these. My first ones I used some low gluten flour but they came out like giant oatcakes (no problem, I love oatcakes!).
It is also available in West Bengal , the state of India 🇮🇳 with the name of "Dalpuri". And it is delicious. It looks exactly in India like her preparation.

My 90 years old mum always like to make dhal purree to give us a treat. She was a shopkeeper in a village. It never came out like the one we buy on the street. She has been given the wrong recipe and the wrong method. I always admire her taking the pain and patience doing it, with the basic utensils.
It really doesn't matter which part of the world we live in..when we make puris, whether it's dhall, pigeon peas etc, the puris were handed down to us through our ancestors from India..and it's been modified to suit our tastes. In Trinidad, we make it exactly the same as this host except for the use of the water she used to knead the dough, every utensil she used, we do too, even the names for them.. Credit should also go to our Indian brothers and sisters, for giving us this delicious staple roti/puri...and to our brethren from the Indian diaspora, congratulations to us for keeping the culture alive..ohhh...we also use baking powder in the dough and it swells like a balloon on the tawah...😋😊
May be they find the utensils she used awkward but in reality hats off to her ,she doesn't care what others think. lot of mauritian use old pots and pan .as long as it is Clean there's nothing wrong. Thanks for the lovely recipe Shelina, I’ve tried cooking it before but the recipe that I have used, there was cumin instead of the fennel seed. I’ll definitely try your recipe to see the difference it makes. But I’ve never seen Dhall puri as big as yours before.
Very similar to Guyanese dhal puri, some people add fresh pepper to give it a mild spicy taste when blending the peas. Had a great time in Mauritius two years ago.

I will have to do some research to see if the Indians who went to Mauritius, Trinidad, and Guyana came from the same region in India, because dhal puri is one of the top Indian foods in Trinidad and Guyana and was brought there by the Indian indentured labourers after slavery ended in 1838. In Trinidad and Guyana, a lot of herbs and spices are used in their dhal puri rotis. I understand that Suriname also has a large Indian population, but I have not been there yet to see what their Indian cuisine is like. For those of you who would question why I did not say "Trinidad and Tobago," it is because the Indian population in Tobago is different from Trinidad because the histories of the two islands are different.

nice - I like the idea of using the liquid from the dhal to mix in the flour - but more importantly what you also need is a dabla to flip your roti!
In Guyana we add more seasonings to the dal, also we would grind the dal while its still hot because it tends to be a bit more difficult to ground when its cool/ cold. We would add hot peppers, garlic, gerrah, salt, and other blended seasonings. Its awesome. Nice to see a different way to making it. 🇬🇾🇨🇦😍

I know right only the people who comes from the Caribbean Islands and Mauritius knows about this although people in Mauritius makes it a little bit different from Caribbean people. But there are quite a few Roti shops in the Toronto area that are selling them now.

Hi Shelina thanks for all the recipes. I've bought a few Mauritian cookbooks from Le Caudan when I was over there but just bought yours. Best Kalia result, and I'm having another go at these. My first ones I used some low gluten flour but they came out like giant oatcakes (no problem, I love oatcakes!).

It is also available in West Bengal , the state of India 🇮🇳 with the name of "Dalpuri". And it is delicious. It looks exactly in India like her preparation.

My 90 years old mum always like to make dhal purree to give us a treat. She was a shopkeeper in a village. It never came out like the one we buy on the street. She has been given the wrong recipe and the wrong method. I always admire her taking the pain and patience doing it, with the basic utensils.
It really doesn't matter which part of the world we live in..when we make puris, whether it's dhall, pigeon peas etc, the puris were handed down to us through our ancestors from India..and it's been modified to suit our tastes. In Trinidad, we make it exactly the same as this host except for the use of the water she used to knead the dough, every utensil she used, we do too, even the names for them.. Credit should also go to our Indian brothers and sisters, for giving us this delicious staple roti/puri...and to our brethren from the Indian diaspora, congratulations to us for keeping the culture alive..ohhh...we also use baking powder in the dough and it swells like a balloon on the tawah...😋😊

Thanks for the lovely recipe Shelina, I’ve tried cooking it before but the recipe that I have used, there was cumin instead of the fennel seed. I’ll definitely try your recipe to see the difference it makes. But I’ve never seen Dhall puri as big as yours before.
Very similar to Guyanese dhal puri, some people add fresh pepper to give it a mild spicy taste when blending the peas. Had a great time in Mauritius two years ago.

I will have to do some research to see if the Indians who went to Mauritius, Trinidad, and Guyana came from the same region in India, because dhal puri is one of the top Indian foods in Trinidad and Guyana and was brought there by the Indian indentured labourers after slavery ended in 1838. In Trinidad and Guyana, a lot of herbs and spices are used in their dhal puri rotis. I understand that Suriname also has a large Indian population, but I have not been there yet to see what their Indian cuisine is like. For those of you who would question why I did not say "Trinidad and Tobago," it is because the Indian population in Tobago is different from Trinidad because the histories of the two islands are different.

It's the same recipe that I have from my mauritian family but only one ingredient is different.
We use cumin seeds instead of fennel seeds.

Also in Mauritius we use channa dal (dal gram) instead of yellow split peas. But I’m sure it’s just as good with this dal too!
In Trinidad dal puri is also a Sunday lunch in many household and served with many curried dishes such as chicken, goat, shrimp, aalloo, chana or some times aaloo and chana cook together, mango. We grind the dal and mixed with geera garlic hot peppers and sometimes with bandhanya as per an your taste.

Never used the peas water to mix the dough, have to try it. I do make a good Dhal Puri if I do say so myself lol love that you didn’t brown them. That’s how I like it. I never used fennel only roasted cumin. Good job 👍🏽👍🏽😋
