  • Chef Mark Hix is basically the OG of the British gastronomy revolution and a boss of the London restaurant scene, with a whole host of top eateries dotted across the capital. Over the years, a rumor has circulated about how he maintains his domination: to keep his head chefs on their toes and their menus ever-progressing, he gets them all together every other Tuesday for a crack-of-dawn cookoff. Munchies snagged an invite to the legendary "Hix Challenge," which heretofore has never been witnessed by anyone outside the inner circle of head chefs. Here's what happened.

    More of this. Brings the perfect juxtaposition to the alternative (equally entertaining) action bronson/fuel/matheson side of things. Really shows that munchies doesn't look at the price or lifestyle around the food, but looks at the pure quality of the food itself. Bravo.

    The critic was hilarious and fair. Some people are very touchy, holy shit.
    Notice how the chefs don't take any offense to what he's saying...

      I don't know how these complainers can live in the real world if they get so upset over a renowned critic's comments when he's explicitly called in to judge a competition.

      alexplode111 It really is quite bizarre, considering a lot of what he said was just tongue in cheek too. They're all friends, there's no resentment there haha. It's just a guy critiquing food and having a laugh while doing it.

      Was he? He was pretty fair when critiquing the food it seems, but during the prep phase most of his comments were absurd and stupid. That bit about taking the clams out of the shells? You could tell the chef just wanted him to shut up.

      ***** In the first instance, he was asking if the chef had focused on using the citrus to cook the geoduck or not, which he had specifically asked about earlier as Hix was starting to prepare it. In the second instance he merely asked about the dish before he tried it; most likely to get an idea if the focus was purely on the raw fish or not...
      He's a renown critic, he certainly knows more about what he's doing than you do.

    This is what Munchies should be. Excellent, 5 star, classy and sophisticated food from people who know what they're doing.
    And no self-centered, presumptuous pricks who think they're the greatest gift to mankind.

      chefs nights out is like cribs for city hipster restaurateurs... it's predictable and it feels as if the food comes in second place, whereas the egos of the people involved is the main element..

    People seems to have negative opinions about food critics in general especially after watching the movie Chef. Well, they are more than half right. There are some vile, self-righteous, pompous critics out there who thinks they are the shit. But this critic in this video is just completely chill.

    Go in a kitchen, see what you hear, then come back and tell me anyone in that room thought the critic was a prick. He was honest and critical, the exact reason he was supposed to be there.

    He’s the only decent food critic in Britain. The rest of them make me puke, and epitomize the saying “ if you can’t do, teach / critique”.
    Somehow Jay is a vital part of the industry. He knows what works and what doesn’t.

    Raw vs Cooked geoduck..... Cooked was cut too big, but the "raw" was marinated for hours, not the 20 min max professed.

      To assemble? Prep is free, and they knew the event is coming up, 20 minutes from ingredients in containers to presentable plate. Which seems to be the way it's done in pro kitchen with endless interns prepping things all day and quick turn around from orders to service

      I'm sure you know more than a world renowned critic maybe they don't show the palate cleansing because honestly who wants to see that. Every critic has their own way of doing things there is no right or wrong way to judge food, critics get paid to voice opinions and opinions are not facts.

    hard to say what's worse here, the lack of invention, rote mentality, over-professional, under-inspired, passionless and parameter-bound approach of the chefs, or the weary, entitled bored tone and mindset of Jay Rayner
