Yes, but you'll need planning permission and building regulations approval if you're doing this here in the UK. You may very well have to jump through hoops to meet these requirements, but it's better than getting a mortgage for a normal property.

Half of that space could be a fully functional kitchen in the middle of that space. I know they have different floor plans with different options. Can one design their own floor plan options?

Exactly, why have a two bedroom tiny house without a fully functional kitchen. Don't need a two bedrooms without a kitchen to cook in and no closet space and no washer and dryer space at all. Keep the smaller bedroom and turn the large bedroom with the balcony area into a kitchen and living room space. That would feel more like a fully functional tiny one bedroom house with a balcony.

It has little feet. I only know this because I looked it up after I took interest in shipping container houses, but the easiest solution would be to construct a pier foundation with concrete. If anything, I’d say this prefabricated unit would lend itself to pier foundations even better than a shipping container because it has feet. I don’t know what the rules are in your country, but over here in Britain you would need planning permission and building regulations approval. Given what those entail, they shouldn’t be too hard to come by, given the small size of this dwelling.

There's a serious flaw in design no matter what country or wonderful peaceful place it goes to the door opens outwards any human animal or beast can enter easily when opening door outwards from inside it offers no protection to anyone.
