Homemade soibum (Fermenting bamboo shoots) in Manipuri and Nagaland style.

  • Hello everyone,
    In this video, I'll be fermenting bamboo shoots in Manipuri and Nagaland style.
    Manipuri style is usually prepared in large quantity. The outer parts will changed it's color a bit and that's normal.
    ** For Manipuri style don't use the tip or the softest part of the bambooshoot. Use the soft part for the Nagaland style.

    Nagaland style are exactly like we do in Thailand. I never seen fermented bamboo shoot in Manipuri style before, will sure try. Thank you :)

    My mom sometimes uses a shortcut to make it faster. She just submerged the bamboo shoots under water with a spoon of salt. It's ready within a week. It's very sour and smells good and interestingly it exactly looks like freshly chopped bamboo shoots. It's a weekend family dinner party recipe. When traditional fermented bamboo shoots are not ready.

    Earlier I had tried several times bamboo shoot fermention since I find it very tasty when mixed with pork curry, I couldn't find the right way of fermenting it but after watching your video, i tried naga style bamboo shoot fermentation, it's coming out fine so I cannot just sit without thanking you.......your video is ver helpful and now I got to know the right and clean way of fermentation.       Thank you so much. I'll say try the naga style with water. Manipuri style is for large quantity so with little bamboo shoot the color change to dark.

      Or 1 thing you can do is for the Manipuri style, ones the water has released or after a week you can transfer it in a plastic bottle and press it down firmly

    Try the dry bamboo shoot fermentation.. its too good for chutney along with ginger and mints leave.

    Just come across one recipe which use grinded fermented bamboo shoot. So I thought to watch how it is made. Thanks for video. But where else do we use this . Can this replace fermanted fish.

      Welcome to my channel 💐 Fermented bamboo shoots can be use in any curry or as a substitute for tomato. No it can't replace Fermented fish they are 2 different things

    Where to keep, in dark place or warm place, manipuri style?

      At home people Keep at their veranda.. you can keep anywhere in the house and at a warm place

    How long can we keep it for longer use?

      Minimum fermentation is 3 months and upto 6 months or more it's totally up to you, the longer you keep the stronger it will be. What I know is you can store fermented bamboo shoot for very long time but I won't be able to tell you exact how long. Thanks

    What to do with the Naga bambooshoot after getting fermented?? Shall we keep it out in another container removing the water or keep it like that only ?

      No need to take out, keep it like that. just take out some when you want to use

      That is preserved bamboo shoot, I've seen but never tried it ,you can try. In this video I'm showing fermented bamboo shoot, taste is different it has got strong fermented smell and sour taste

      We can store for long time in fridge, in room temperature also you can keep but the sourness level will increase. Here I'm showing just the demo. Manipuri style is meant for large quantity.

    What type of Bamboo you used?? We have 2/3 types of bamboo shoot here in Mizoram.. Also,where will we leave it to ferment,do we need to put under the sun or under the shade..😃

      Yes same in Manipur as well. We usually use the big size varieties. Ferment in semi shaded area. This video is just for demo, in actual its Ferment in large quantities

    In manipur we made bamboo shoot in many ways, you made with water we the people of manipur also made and we called it Soidon, that is one of favorite bamboo shoots in manipur

      Totally agree even though am from Manipur. The Nagaland style can be used in every kinds of curry and extremely delicious. Manipur one stinks in a odd way.
