I am guessing the most common tyre used was 235/85/16?

Yes because it's the standard size on a Defender. The white Discovery is on 265/75/16 ;)

Seen many on 255/85/16? I can't decide on 235/85 or 255/85. I really want that bit of extra height/diametre, but not sure if it's overkill or not as far as capability and 4x4 performance goes.
