They may be using the waste as food for Cow/Buffalo etc. Or may be converting in to manure and while converting in to manure, they may get cooking gas!!

Instead of plastic sheet , they use banana leaf for use and throw.
When hot food touches a fresh banana leaf it releases some aroma which gets incorporated in the food... It is not just healthy but also aids in better digestion... And it's better to place the leaf alone or on a clay plate... Because earthly clay minerals also get incorporated in the food... In olden days food was prepared in clay utensils as well
