I got myself some swiss carbon knifes that came on a newspaper promotion, they were 10 dolars or something like that if I am not wrong. I kept from myself a Nakiri. We got the recomendation because the brother of who in that time was the boyfriend of my sister was a chef. They are seriously sharp and still work great after 7 years that we brougth them

For those interested in getting into sharpening your own blades, White and Blue steels are simply amazing. A few months of daily use and then maybe 60-120 seconds of sharpening on a decent high-grit stone and you're good to go for another few months. I own many different Japan blades with a variety of core steels and I have chosen to only move forward with White and Blue steels. The Naru is a heck of a bang for your buck. Great vid.
it's a pity that I already bought Tsunehisa Aogami Super/SS Kurouchi Red Santoku Knife 18 cm because I would buy what you recommend but I hope I don't lose anything :) I love carbon steel knives, how beautifully they sharpen ;) thanks to you I bought the most expensive knife in my life and I don't regret it 😊
Kyohei Shindo is hand forged and less than 100$ for the gyuto with the basic handle. 80$ for the nakiri. The handle isn't as good, but the grind is amazing for the price. They sell out in about a day.
I bought the Hatsukokoro "Kurogane" Aogami #2 Bunka from your store a couple months back and it looks really similar. It appears this Naru though has a better fit and finish than the Hatsukokoro did at close to the same price (the Naru is $10 more). I had to thin and fix many grinding gouges as well as set new bevels due to them being taller in areas all over the knife and nearly non existent in others immediately before use.. Otherwise though, now that I fixed it, it's a good knife, but for near the same price I may give this Naru a try as well! Side note, with the Hatsukokoro, I didn't mind the issues, as I love to test my skills, and I bought it at that price level to be a "beater" knife that I don't mind taking slight abuse my wife loves to give knives... lol she doesn't treat them with the same care I do... I once found one of my Moritaka AS Gyuto's in the sink, sitting nearly submerged in a container of water surrounded by spoons and other utensils, YIKES! lol Never again I said, never again! haha

I am in the USA ( Maryland ). Over the last 5 I have designed & created the tooling to build knives with custom sized & contoured handles for hand widths from 72 to 96 mm in 2mm increments. These are truly right & left handed & have to be because our hand geometry is mirrored. Do you want to start a conversation ?
I'm making a second comment to ask a question. I commented originally about my Hatsukokoro Kurogane Bunka in Aogami 2 I bought from your store, now looking at possibly buying this Naru (now out of stock) I noticed the box is identical. Then I looked at most Hatsukokoro knives in your store and THEY are also made in Tosa. So does the Hatsukokoro brand get some of it's knives from them as well? If I am not mistaken, Hatsukokoro gets knives from multiple different blacksmiths if I am not mistaken, but I am just curious. Could you help and elaborate? I finally got the Hatsukokoro to a great working place after much thinning, but this Naru definitely appears to have a better fit and finish.
I got it by searching directly on the website. the rebrand link this doesn't work if you're not from the US. After going to checkout I got the message that is was out of stock and removed from basket, but in reality it was OK and I was able to purchase. What i want to know about this Bunka is does it have a 50/50 grind with a secondary edge bevel? I just saw online a Japanese-forged Bunka that has a 50/50 grind but without a secondary edge bevel, which seems like it would facilitate ease of sharpening. Maybe I don't want that. I don't know. So, what about the grind on the knife you just plugged as your favorite for under $100?

I love Tosa knives, they are a great project knife. I buy mine without handles. They are fun to fit and do require final sharpening to get it super sharp. The only challenge is that the tang width can be extremely large, especially the 210mm inasa or bunka, making it very difficult to find a handle to fit it.
i'm guessing the tang in 3-4mm, which is larger than most tang holes. you can heat up the tang so that it can burn away a bit of the tang hole, which would result in a really tight fight
sorry, kurouchi finishes are always soft iron. i think the typo came from the multiplate uses of "non-stainess" and not-stainless. thanks for pointing that out.
the Misono is a mass production knife (nothing wrong with that), and stainless, which is easier to maintain for most people. the Misono also has a western handle, which generally speaking is more comfortable for most people, especially for those coming from German knives. if you do not care about the fact a knife is hand-forged, perfect the western handle, and stainess blade, the Misono will probably suit you better

Sweet knife at a great price. I bought the Dunn board based off your previous review. Awesome board to say the least. However, I wish I saw the option to buy the 1/4” instead of the 1/2” at double the price. Oh well, more sturdy and much less likely to warp.
haha. i have them both, and i get your point. i use the 1/2 " as a stationary board, and the 1/4" for the bbq/smoker. both work great where they are situated, but i agree, the 1/2 " can be overkill

Wait.. theres more hand made knife brands in japan.Masakage line their blacksmiths are still forging knives, Itsuo Doi, Enami Hitohira line, Harukaze, Moritaka, kohetsu, Okeya, Sakai line, Takeda, Tani, Tsubaki, Yahiko, Murata, Yusaku and list goes on. There lot of less than $100 knives on their lines.

I'm using an Old Hickory high carbon steel knife that is 70 years old. Has an oak handle and quick and easy to sharpen to paper cutting edge. I think my mom paid about 5 bucks for it when new.

I bought the Dunn board based off your previous review. Awesome board to say the least. However, I wish I saw the option to buy the 1/4” instead of the 1/2” at double the price. Oh well, more sturdy and much less likely to warp.
haha. i have them both, and i get your point. i use the 1/2 " as a stationary board, and the 1/4" for the bbq/smoker. both work great where they are situated, but i agree, the 1/2 " can be overkill

cost of living in Tosa is a bit less than the bigger cities in Japan, and they have a higher number of people willing to make knives.
Price doesn't really matter when it's sold out instantly and never restocks

Wait.. theres more hand made knife brands in japan.Masakage line their blacksmiths are still forging knives, Itsuo Doi, Enami Hitohira line, Harukaze, Moritaka, kohetsu, Okeya, Sakai line, Takeda, Tani, Tsubaki, Yahiko, Murata, Yusaku and list goes on. There lot of less than $100 knives on their lines.

Surely you can see how "Here is the best knife under $100 and it just so happens you can ONLY buy it from me" is essentially akin to a self sponsorship and should probably be declared in the same way.
It's the same as Adam Ragusea declaring his affiliation with Status Dough Pizza or any other brand affiliation. Omitting that fact is inherently dishonest. I don't think you are a dishonest person by any means, as I said, I have followed this channel for some time and do not believe this to be the case. But I do think this is an oversight and should be addressed, potentially with a pinned comment or the like.
EDIT: I now have no option but to believe that this omission was deliberate and dishonest. Sad, really...

Also, the specific financial stake probably doesn't exist because he's selling the knife for pretty cheap. he has his own brand to cut out the middleman and save money. Not to mention he's chosen to offer lower prices rather than greedily suck up profit.

I'm using an Old Hickory high carbon steel knife that is 70 years old. Has an oak handle and quick and easy to sharpen to paper cutting edge. I think my mom paid about 5 bucks for it when new.
