⬇️⬇️English recipe follows⬇️⬇️ 西洋菜紅蘿蔔陳腎豬踭湯 材料: 西洋菜一斤半 陳腎2隻 豬踭肉一斤 紅蘿蔔一個 南杏20克 北杏5克 陳皮2角 蜜棗3粒 處理: 1. 西洋菜,清水加入粗鹽一湯匙,浸20分鐘。 2. 南杏、北杏、蜜棗及陳皮,清水浸。 3. 預備一鑊水,加入紹興酒一湯匙及粗鹽一湯匙,加入豬踭,大火滾起至起泡,加入陳腎,再出水2分鐘,倒去水分,清水洗乾淨,擎乾水。 4. 紅蘿蔔,洗乾淨,去皮,切一舊舊。 5. 南杏、北杏、蜜棗及陳腎,清水洗乾淨。 6. 陳皮,清水浸軟,刮去囊。 7. 西洋菜已浸好,清水沖洗2-3次,檢查清楚是否已洗乾淨,擎乾水。 8. 洗乾淨煲。 9. 西洋菜,放煲內。 10. 其餘材料,同時放煲內。 11. 加入清水至6升的容量。 烹調: 1. 大火滾起湯。 2. 湯已滾起,轉中慢火,煲1小時半。 3. 湯已煲好,熄火,焗2小時。 4. 湯,飲用前再加熱。 5. 完成,可享用。 Watercress and carrot soup with dried ducks' kidneys and pork ankle Ingredients: Watercress 1.5 catty Dried ducks' kidney 2 Nos. Get it peeled and diced. 5. The kernels, dates and kidneys, rinse thoroughly. 6. Dried orange peel, soak in tap water until it turns soft. Remove sac. 7. Watercress has been soaked well, rinse twice or thrice. Check if it is totally clean. Drain. 8. Rinse a pot. 9. Watercress, put in the pot. 10. The rest of ingredients, put in the pot. 11. Add in water up to volume of 6L. Steps: 1. Heat up the soup at high flame. 2. Soup boils up, turn to medium-low flame and boil for 1.5 hours. 3. Soup has been boiled well, turn off fire.
