    Now retired, my dad has over 50 years of experience as a Chinese chef. Everything he makes is SO GOOD. You won't regret trying this amazing Ma Po Tofu recipe (麻婆豆腐)!
    Whereas traditional Sichuan cuisine is known for its bold and intense flavors, my dad's version of Mapo Tofu is a gentler version with a nice kick of spice (although you can still turn it up x100 🔥).
    This classic Chinese tofu dish hails from Sichuan, at the Chen Xinsheng Eating House in 1862. It quickly developed national acclaim, inspiring generations of chefs to come, and spurring hundreds of variations.
    Correction:
    At 8m 06s, the correct word for "light taste" is 清淡 chīngdaahm. The graphic has a slightly different connotation.

      My Vietnamese parents are the same as well. During the pandemic they even cooked, carefully packed and delivered food to where I was living (which was more than 500km from my hometown) because they were afraid I wouldn't be able to eat anything because of the lockdown. I was 26, been living on my own for 10 years and cook regularly, and they still did that.
      You just gotta love your asian parents.

      In fact, this is actually very easy. You can replace them with mince meat from supermarket and get chilli bean paste from Asian groceries.
      only 3 tasks left: chop tofu, green onion and make corn starch slurry

      Actually, many recipe really easy when They said easy, It just the Ingredient very hard to find and It isn't like people who just started cooking gonna know which ingredient can be replaced 👀👀

    My heart aches when your parents spoke about their childhood. My Chinese grandparents migrated to Malaysia in the early 1930s, they and my parents too had very difficult lives, eating little amount of rice only with side dishes mainly without meat, sometimes only with fermented beancurd or canned salted fish. I'm very glad to see your parents are doing well now! Sending lots of love from Malaysi!

      yes, my grandparents used to hang a piece of dried meat(for days) on their dining table, when they watched and salivated, they will eat their white plain rice (with some soya sauce or sugar). that piece of meat will not be consumed till 'big events'(ie. birthday etc)

    your dad must be a great person. He managed to run a restaurant, and kept a good relationship with the kids.. i believe this is also because of your mom. As i know, restaurant owners don't get to see their kids much..love you channel.

      I have 2 uncles that owned their own restaurants. My cousins would help out after school and on weekends. They would take orders, do dishes, cook, clean. It really depends on how the restaurant is run.

    My ex was a Hongkonger with parents from the mainland. Your parents remind me so much of them -- sweet, educational, incredible cooks, and people who refer to challenging life skills as "easy" bc they've been forced to become masters. I don't miss him, but I miss "mommy" and "daddy," their home cooking, and kitchen/life lessons..     Love hearing your mom and dad speak, I feel our dialect is a dying language or often overlooked. I’ve been in Japan for about 15 years, thank you for bringing me home. Lunch/Dinner conversations are the best!

    In love with your parents, especially your dad. The way he keeps calling you "son" and the cute way he loves and cares for Cam. My mom used to make dishes like these and unfortunately her recipes died with her. So nice to see this and pick up some of the recipes. We are from the same area of China so the recipes are so familiar.

    I watched a few videos before I came back to this first one - your dad really is such a natural at teaching , such positive energy. I usually avoid making tofu dishes because I find them hard but this really makes it seem so easy that I want to try it. Thanks Chef Lau 😊

    Have been making mapo dofu for decades (using pork, beef, or mushrooms along with the tofu) and only today thought of making it with chicken because I happened to have some. This was helpful to me to watch Dad mincing the raw chicken with a knife (his knife technique is elegant and efficient!). Also like his attitude--"Mapo dofu can be anything." Thanks for the tips!

    Your family reminds me of mine, my dad grew up poor lost both his parents when he was in highschool. He was an introvert because he didnt have the money to be social. I lost him last year, but I will always be grateful that he worked hard so that I could be this privileged

    My dad used to have a garden, out in suburb of Connecticut. He used scrap wood, to make make a scaffold, and grew Chinese Okra, Chinese Green Squash. The Okra and Squashes would hang off vines, down on the Scaffold. He grew so much that he gave a lot of it away to friends and family.

    Thank you so much for starting this channel! I will definitely be coming to learn some authentic Cantonese recipes that I grew up eating. I love that you included measurements for the sauces too! Every time I ask my Dad how to make things, he just says a little bit or a dash. The background information about the dish is also very educational so I can teach my kids about the dish!     Made me tear up when your mom said they didn't have much to eat when they were little. It's true and makes us so much more grateful to have what we have in present day.

    Aww your parents are so sweet! I know asian parents are not as affectionate to their kids. But your parents are very affectionate towards you. The way your dad urges you to eat more and your mom offering the watermelon, shows how much they care and love you.

    Just followed your guide, but instead of chicken I did pork tenderloin and also used silken tofu. Came out perfect! thanks for sharing this.
    Reminds me of my grandma's mapo, her family is from Sichuan but all live in Taiwan now.

    Wow, that looks so amazing! I like your dad's philosophy about adding whatever meat you like. We ate Japanese style mapo tofu (called mabo dofu) and it was mild too like this version. Still one of my favorite dishes.

    Interesting, can you ask your dad why he didn’t include Sichuan peppercorns? Every variation of this dish that I’ve had has had tons of them.

      Hey Matty! This recipe is a bit more of a Canto take on the dish where the flavors are more mild. We use chili peppers that my dad grows but you can definitely use szechuan peppercorns though for the more traditional Sichuan taste. Feel free to play with the type of peppers or the amount to best fit your spiciness preference :)

    Idk why this makes me feel sad. Your parents are literally my parents. My mom speaks more English than my dad and my dad taught me to cook mapo tofu when I was younger. And my mom offers/forces me fruit to take home too lmao

    I can't be the first one to be surprised that there are no Szechuan peppercorns in this recipe. To me, that's the signature ingredient of the famous dish from Sichuan province. Of course, your dad's recipe looks fabulous, but, as you do note, it's Cantonese style.

    This was much easier than I expected. I had my first taste of a good mapo tofu in Seattle. 😂 I've always wanted to make it myself! I might try it with the ground turkey in my freezer lol

    I'm going to have to try making this. Not gonna lie I use the House brand Mapo Tofu sauce when I have a craving. I've never had authentic so I don't know what I've been missing. I brown a small amount of whatever meat I have, crumble some firm tofu, sprinkle some red chili flakes and let it simmer in the sauce and eat it over fresh rice or sometimes rice noodles. Such a warm and comforting meal. I love not only the way your dad carefully explains the recipes but we also get a history lesson and stories. I almost feel in small way like I am for just a moment a member of your family too. As someone who is estranged from her Korean mother please ALWAYS cherish these relationships.

    I've watched so many of these videos and the most impressive thing to me is that he truly is a MasterChef! He cooks on his counter top and I've never seen him spill or have the oil jump around and get everything dirty. If that was me cooking on my counter top I'd probably still be cleaning it off lol. Amazing! I bet it smells so good!

      There are different types of cleavers in a Chinese kitchen.

There is only 1 sharp cleaver for all chopping and cutting of meats, fruits, and vegetables in every Chinese immigrant or not household I've ever been in in China and Hong Kong or through out Asian countries. Whereas in North America, Chinese descendants will have lots of different knives [usually French knives] for cutting up different things or because of a "technique" such as filleting, deboning, chopping, slicing, or carving something. Also there will be various coloured meat, vegetables, fruit, etc cutting boards to avoid "cross contamination" which Chinese home and restaurant kitchens DO NOT HAVE either. These kitchen tools are utilitarian and are multi-use items across Asia. Cleanliness and the concept of "cross contamination" or using a cutting board for both "cooked" and "uncooked" items is much more "flexible" but not DANGEROUS as one might believe. Cutting boards, knives, and other tools or surfaces are cleaned before and immediately after each use. That is a result of context and culture. Chinese people throughout history in China did not see home cooking as a "hobby" nor a "specialized" culinary activity needing specific knives, surfaces, nor places to complete cooking tasks. The kitchen was rather sparse, a wood burning "stove", a huge wok, a spatula, a scoop, a sieve, and a tray of open staple spices, sauces, oil, and fermented bean pastes. Like a drummer in a band, the tools are few but they are expertly manipulated and used to master every cutting technique needed to make any type of food. In China, these skills are likened to "kung fu" and hence the historic and present day connection between chefs and kung fu mastery in teaching an apprentice in the kitchen, a sacred space for practices rather than a treasure trove of "instruments".

      Only the Japanese are very critical about their knives 😅 Chinese and most Southeast Asian families use one cleaver for everything 😅😅😅😅
