      The thing about Jamaican cooking that I like is, everybody do it how they like, I am the type of person who loves to experiment in my kitchen, some comes out very good while others not so good. the important thing for me is that I tried. It tasted really good even though it came out a little too soft. Working on it for next time however!!

    Yes , this is the right method. It is exactly how my mother use to make it when we was growing up , minus the bacon , but I am going to try it with the bacon because I love bacon and I know that it is going to taste wicked , thanks for that extra tip. I know that I am going to be licking my fingers after making this one . Can't wait . Gonna ave it with fry fish or mackerel rundown . Heavenly bliss.

    Philip I agree that the ingredients are the same for Jamaican seasoned rice. However I think the way you do it , while it is still yummy I am sure, its more a fried rice than the usual seasoned rice. The flavour you get from cooking it the real Jamaican way has a completely different taste. I do sauté the shrimp in a pot instead of a skillet and add all the other stuff to the shrimp but my rice is uncooked and the ackee and saltfish is not prepared as in breakfast but just boiled and the fish separated into small pieces. the last thing I add is the uncooked rice and use vegetable broth in the proportion 1 cup1 3/4 cups of broth then allow everything to come to a boil then cover the pot and simmer until the rice is cooked. It does not come out meki mecki because the liquid is a little less. You call it plucko plucko lol.

      Sassy Sas I have tried it that way in the past. i have no problem doing it that way too but i wanted to show this way for those who wanted the option of using leftover rice or who are familiar with the fried rice method!

    Biut doesn;t adding the frozen vegetable, frozen instead of defrosting first.Is that not at risk for more water in the rice.

    I feel like since the shrimp is pre-cooked, you should add it at the end or sweat out the moisture separately, or else it overcooks.

    Everything was giong fine. All in one dish, nice and colourful. You just spolied it adding the coconut powder in the end. The outcome is, a Risotto Stir Fry!!

      Ackee is the Jamaican National Fruit and it's an unusual fruit that grows in the tropics. It looks like scrambled eggs when cooks and is usually paired with salted cod to make our national dish called Ackee and Saltfish. If you live where you can access Jamaican restaurants, they normally serve it for breakfast so you can try it. It is very delicious however the texture is quite unusual for a beginner.

    I would have taken off the shell off the tail for f the shrimp. Radish in Jamaica seasoned rice first I heard of this. If you know how to cook your rice it wouldn't be soft. What you cooking is pure white rice with lots of mixed vegetables and your added Ackee and salt fish.

      I will admit it's not the original Jamaican way of doing season rice. My channel is about trying different methods and ingredients to achieve a delicious result. I take your criticisms and will continue to push the envelope to improve my craft. Not a professional chef by no means just a regular Jamaican who love food.

    Everyone cook season rice different you do it separate they do all season in one to some it comes out wonderful and some don't so everybody cook season rice different.... But nice video thou

      +Phillip Allen I like mix up mix up but you beat me. I loved it up to the point before you added the pumpkin. Very colorful . Maybe the pumpkin was too wet. Then you added the coconut milk. It looks tasty I will try it but I leave out the milk. I would say more of a one pot meal than seasoned rice. . I strongly believe in experimenting with foods

    I am sure it tastes delicious based on the ingredient,s but in fact it looks a mess and unappetizing. Remember we start to digest pour food even before the first morsel goes in tour mouths, therefore how it looks is vitally important. Constructive criticism!!

Perception is everything. The second part of your comment is also quite condescending and arrogant.       D HDSASHTI Well I'm 100% Jamaican and that's how I've always done it. Remember the idea isn't to do it the same as everyone else. Just to get the same delicious result! Trust me many times it becomes intimidating when we try to follow exact recipes. If you try it you may very well change ur tune! Lol!

      Jamaicans have long been using ackee in their "season rice" if you've never had it, then you're missing out!! Now my style of cooking may not be as everybody else but the dish is authentically Jamaican. Go ask somebody, they'll tell you!!
