The song title refers to a specific breed of cherry (which has also been translated as "winter cherry," but the soul part still makes no sense. That's okay, a lot of Touhou song titles make no sense even in the original Japanese, and that's saying something; the Japanese like to string kanji together in ways Westerners (outside of maybe Germany) would never, like "blood art technique."
I always assumed "ground" was talking about a cherry that was ground up (past tense of grind) into a paste, and if you used a very red cherry (like a maraschino) then you'd get a very red color indeed. The soul part is probably referring to either Remilia or Rumia. Remilia because she's a vampire, Rumia because she's a cannibal.
I heard a bit of "Beloved Tomboyish Girl" in there. Rumia will probably be livid at the prospect of a Fairy-type invading a Dark-type's theme.
