Hi. I worked in a flower shop for a lot of years, and we used Victorinox florist knives. The textured handle is for keeping a grip on the knife with wet fingers. The chisel grind and sheep's foot are for stem cutting work. An edge beveled on both sides will not work as well with that technique that you alluded to, but this blade will slice delicate flower stems without crushing the capillaries. I left the industry a long time ago and still use them as every day pocket knives.
I've had one of these since 1989. Makes a great edc blade that can do a multitude of tasks with the warncliff style blade. It's excellent for carving and doing precision and draw cuts. Mine still has a very snappy lockup after all these years. You should sharpen both sides, holding to the factory angle. I usually sharpen the primary edge the most aggressively and debur the back or flat edge and then put on a micro bevel. Depending on your use, you may want to sharpen it like a kiridashi blade like for carpentry work or actual agricultural applications.
I may come back to this when I need to sharpen it for reference. Cheers, brother! Mine is snappy and a really good sound to it. This, the Pruner, and the Swiss Army 1 are my favorite Victorinoxes … I’m a simple man😆 The grind allows for low drag, clean cuts, which is important when cutting flowers. Good stuff as always, mate👊🏻
I saw on one of your videos you saying you like single bladed SAKs. I've got my fair share. I like the single/double bladed ones to brother. Also I agree with you on that other Victorinox. U-G-L-Y it ain't got no alibi! 🫡

This is because the scissors ✄ crush the ducts that suck up water in the stems. Flower shops in Japan also use Victorinox knives if they know this. It is also suitable for grafting fruit trees! Kiridashi knives are also a standard in Japan. I would definitely like to get a florist knife too 😂✨!!
Simple and sweet at a great price. I have a chisel edge Emmerson, cuts great but I don't know if it's really any better. I had a slipjoint close up on me 😁 Was my own fault though. Excellent video mate!
They do a left and right handed in this Gizmo. Which totally makes sense with this blade grind. I like the sound of your Excel sheet, mate. Mine is a more basic Word document. It shows how my knife collecting has developed definitely. Good reference when selling or trading.
I have one of these in Lilac which I thought was more appropriate for a florist knife and also added a very different colour to the vic collection! But I'm embarrassed to say my floral Lilac gardening knife gave quite a nasty bite!

I have the purple handled one I was on Victorinox official website to get an Alox Solo when I browsed around and saw these, wanted to get one to see what the handle material was like very impressed with build quality, I won't buy from Amazon for ethical reasons they dodge tax and put smaller companies out of business so f**k them, I prefer Alox but have ordered a the Victorinox waiter to see how it compares with the Swiza DO1 I also ordered, always been a bit suspicious about the plastic on Victorinox so will compare the two. Also ordered some slips which are sold out so waiting for Heinnie Haynes to complete order, yes I know I said I had stopped buying now I have four more knives, Rabbit hole's are dangerous. lol

As I said I have ordered the Swiza DO1 no lock version and the Victorinox Waiter for comparison its only £17:95 so no big loss if I don't like it, both knives coming from Heinnie Haynes. 😁
