Touhou really is just family friendly Japanese mythology.
To be fair western fairy tales also have ducked up origins but now they're considered as classics. Touhou is basically japanese disney.

My face when Touhou taught me more about Hinduism, Buddhism, Taoism and Shintoism than any other youtuber trying to push an agenda. It literally got me interested in learning more about my own religion (Hinduism) and Shintoism. So far I have come to realise that Yama is my favorite God and Suzanoo is a gamer.

Considering Suika's love of drinking and being an oni, I'd assume she's also at least partially based on the Shuten-Douji, not just Onis in general
She literally is Shuten-Douji. She just goes by Suika in Gensokyo. One of the major themes in Japanese folklore and Touhou in general is that of names holding power and the weaknesses they come with. She's technically in hiding, but due to Oni pride, doesn't lie. She can lie by omission, though, and that's why she got kicked out of Oni society.

Guessing Yukari is the Thousand Eyes Tentacle Warping Tornado.
Rarely known as Omega Yokai Class.
She's more based on a relatively old urban legend. But even that might just be coincidence.

What about WESTERN mythological beings in Touhou, we had mermaids and fairies, but what about other creatures? Like: Leprechauns, Gnomes, Elves (the tiny kind like in Santa movies), Trolls, Kobolds (the original German prankster kind, not the lizard/dog people from DnD), and Krampus?
I think there're only a few western mythological creatures in touhou like werewolf(Kagerou), vampire(Remi and Flan), chupacabra(Chiyari but she's actually a tenkajin), chimera(inspiration of Nue) and goblins

Shiki Eiki’s a Yama, which is quite literal, Kisume is a tree dwelling youkai, and momiji is just a tengu I believe

Zun learned early on that the best graphic design option for a computer game with limited graphical capabilities _and_ the easiest way to get players to accept subpar artwork was to draw lots of pretty girls. When Touhou took off, he just ran with it.
Kogasa, Suika, and Seija really aren't _that_ off the mark. Go look up nue, satori, tsuchigumo, tengu, tsurube-otoshi, ushi-oni, shinigami, or baku if you want to see some _big_ stretches. Don't even get me started on kappa.
