- FRITTATA with ZUCCHINI:
6 Extra Large Eggs
½ Zucchini, chopped
2 Tbsp Fresh Parsley, chopped
1 Tbsp grated Pecorino Romano Cheese
1 cup Yellow Onions, chopped
1 cup Green Onions or Scallions, chopped
Olive Oil
Salt & Pepper to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

I really enjoy watching your videos it’s brings me back to my childhood in watching my Grandmother cook unbelievable dishes in our kitchen, my Grandmother lived upstairs in our house until she passed away in 76 at the age of 86 ,

Nakomis (Grandmother), so good to see a new video and making such a delicious meal. Frittatas remind me of my Mom and the years when we were stationed in Madrid. She would use the fresh vegetables from the garden, but my favorite one was with sausage like your Dad.
In one part of your video, I was like, sing Grandmother, sing! And you did! This one brought tears to my eyes. I can’t help but remember all of the strong women before me who have now passed. God Bless them and all of what they have taught me in and outside the kitchen.

That’s just how my nonna taught me to make frittata, sometimes she used zucchini, or potatoes and onions, and flipping it just like you do, no finishing in the oven, flip like old school! And she would always sing when cooking, 97 years old now she doesn’t remember the words but she smiles when she hears her favorite songs .
Oh, Ginas family must be so happy to have these memories. I would give anything to hear my grandpa singing and playing his violin again.
Beautiful song and video! I have made this since I was a little girl, my Aunt Emma from Brooklyn used to make it for us when we visited and I would watch her and then started making it for my mom and I. You can put anything in it, usually I would make it after we had left over sausage and peppers with onions and it was fantastic! This reminds me my mamma used to make frittata for brunch on Sundays after church. She would use onions, salami and anything else she thought was good. We loved it. I think my husband and brother in law married us for my mom's cooking 😄❤️

Gina, you remind me of my own grandmother who passed away exactly 12 years ago at the age of 80. She too used to sing while cooking and doing little chores around the house. I had almost forgotten that. You just brought back so many beautiful memories. She lived thousands of miles away from you in India but your generation had similar traits all over the world. Lots of hard work and no money. Food was the only luxury they could afford and that's how they expressed their love. I pray for your health and wellbeing. God bless you!!

Gina, you should buy some of those thin, flexible cutting mats! You can just “fold” them and neatly “pour” your food into the pan, bowl, whatever. I LOVE mine! I love your videos you remind me of my French mother-in- law❤️
