From Winter to Spring | Preserving Garlic & Canning Spuds | Digging out the Bees

  • Spring is here in Alaska, and even though there is still snow abound, we are eager for what lies around the corner. We dig out the bees and assess how they fared over winter. It's also the time of the year we check on produce that has been storing through the winter months. On today's agenda we process garlic for three different methods of preservation and pressure can potatoes. We finish off the long day with a new dish, German Potato Dumplings.

    5-6 medium starchy potatoes, steamed and riced (no skin)
    2 large eggs
    2 cups flour
    1 tsp kosher salt
    1/2 tsp nutmeg

    If you build a small Shed in your new place, you can incorporate your Beehives attached to the shed with the entrance to the Hive in the outside of the Shed. This idea I saw as a child were I lived in Germany were we lived. We had also very cold Winters and a lot of Snow. The Man that kept the Bees let us into the Shed to see the inside.from the inside. He had a small heat source in that Shed.

      My grandfather did this too when we were young many years ago.
      If you think about it, it’s like a larger scale of an ant house.
      My grandfather was a bee keeper 50+ years old, and would give my mother large mason jars of honey / honeycombs.
      Miss those days.

    Would highly recommend reading the book keeping bees with a smile. It talks a lot about keeping bees in northern climates.

      Cannot agree more, they rely on us humans for survival. I have never seen hives covered in snow as yours were, but read the book and you will get many survival strategies.

      Absolutely. It seems they are using medium frames with little resources for the cluster, other the the sugar above the frames, but they have to cross the gap.

    Condensation appears to be the major problem. That moisture is a real killer for the bees. Sorry you lost your bees. It took 3 years for me to figure out why I was losing my bees every winter. Made a inner cover filled with bedding material (pine shavings) and this is the first year I didn't lose any bees. I made a video but just haven't had time to post it yet. Love your channel!! You guys are pretty awesome!!

    also a bee keeper. Careful with the greenhouse. It can get very warm in the green house, sometimes over 25 C when there is full sun in March and give the Bees a false sense of spring. A good tall wind break and always keep the snow away from the entrance. They should also have a top entrance with the candy board. This gives them more ventilation. Good luck you 2.     I love potato dumplings very much. the water should not boil, just simmer. I fry leftovers in slices with bacon, onions, eggs and cheese. Thanks for your great videos ❤

    I love it when ya'll spend 12 hours in your kitchen, it means only one thing, I'm going to get hungry...lol 😂😅 Potato dumplings were a staple for us growing up in Wisconsin, along with perch, pike, or venison. Yummy! Love ya'll ❤️, looking forward to ya'll spring cleaning and moving on..

    Eric and Ariel, regarding the bee's, if you were to do a small shed attached to the back side of the house you can pipe some of your heat into the shed via a small 12 vdc fan thru a 4" PVC pipe and lightly heat the interior around the hives thru out the winter WILL keep the bees alive... doing a scheduled bee cleaning on the warm sunny days.... not only will it keep the bee's alive and warm, and will keep you from having to shovel snow.!.. when you have warmer weather transfer them to your outside summer location. They will be happier for it and so will you!!!

    Eric at the country club we do that garlic cleaning with 2 bigger stainless steel bowls. You can get more in and they have more shake room.

    When building a house for bees, it is deepened into the ground by 2-3 meters, or you can winter the bees in a polycarbonate greenhouse, you just need to lay an opaque material over the polycarbonate sheets. Moss is the original moisture absorber. They can fill pillows for bees

    German dumplings are wonderful, my grandmother dipped her spoon in the broth then in the dumplings, repeat till all is used.

    I learned how to make German potato dumplings while living in Germany in the early 1990's. The Germans call them kartoffelknödel. Kartoffel meaning potato & knödel meaning dumpling in German. I love that you try new things, and preserve as much as you can. Sorry about the loss of your one hive. Looking forward to more of your videos. 😊

    Have put whole cloves in a fry pan with small amount of water steam on low, cool, peel and zip lock freeze.

    Hi ya'll! Your dumplings looked just right! My mom used to make them all the time, she would add shredded raw potato to mix and bacon bits, thanks for the memory. So sad that you lost the bees you put a lot of care into keeping them warm.

    We love our garlic fermented honey!! We use it for sicknesses- works wonders for coughs on my kids! Definitely a messy fermentation but so worth it!

    Hello. In Poland, it is now after the change from winter to summer time 15 minutes after midnight. Ariel, you made me hungry with this canning and cooking. I was with you at the bees, I met with beautiful chickens and a rooster, I saw a cat with beautiful eyes and a sleeping dog.     We just use our fermenting pucks to weigh the garlic down. We eat the garlic, especially when we feel like a cold or something is creeping on and the honey is great on chinese food or tea! love the videos, folks!

    Liquidise the Garlic with white wine vinegar. Creating a pickled garlic. When you cook with the liquidise garlic you take a spoonful at a time.

    I plan on trying the ~ German Potato Dumpling Recipe ~ I will be making them smaller. Seeing it is only me at home. Going to try to freeze them to see if they can freeze. I was thinking of steaming them on a broth . might give them a good taste.

    Bee won't do a good cleansing flight until temps get near 50 degrees F. Some of that moisture on the bottom board could be from the melting snow at the entrance if your hives aren't tilted slightly forward. Not unusual for dead bees to get moldy. Love the videos!

    My Ukranian landlady used to make potatoe dumplings infused with cracklings (rendered pork belly) and then fry them after they were boiled. Oh so yummy..

    There are a lot of variations for this dumpling recepie in Germany. They are called "Klöße". Personaly I like to put the croutons inside, that's how my grandma made them 😊.

    As a german I was happy and surprised to see you making dumplings. A little bit soft but perfect. Very delicious and so cool. You could have eaten them with applesauce or a mushroom sauce as well.
    (To get the dough firmer add bread crumbs, starch or more flour.)

    If you get a moose or caribou in the fall try pressure canning the tougher parts of the animal like you did the potatoes. fill the jars with raw meat and a little salt, then pressure cook for 1.5 hours.

    You guys make some really good food the real homemade from scratch! unlike others videos of homemade meals where they add cans or process food in their recipes and call it homemade i think you two have a lot of experience on cooking and other gardening saving , write a book you guys are Icon. good worker.

    I read an article a while back about how Northern European bee keepers kept their bees alive in the severe cold. I was impressed with one farm that built a wood shelter structure with one long side being raised bee boxes. 3 sides were inside the shed with only one wall being exposed to the elements. I wish I could remember where I saw it. I think I commented on this before on here.

    We have three different kinds of potato dumplings here in Germany. The other variety is with raw ground potatoes and the third kind is with both 50:50 raw and boiled .They often go with a roast and gravy.

      Yes! The 50:50 kind is called "Grüne Klöße" if anyone wants to look them up - beautiful fluffy, very light, tasty potato dumplings. It translates loosely to green dumplings. Green because of the uncooked potato part. The only tricky part is keeping everything together while cooking them. A very traditional part of Christmas for my family.

    I slice my garlic and pour honey over them and eat one or two slices of the garlic with the honey every day. Delicious.

    The honey garlic tastes better the longer it sits and the honey thins out significantly…I have to hide it from my boys so I usually add it as a treat to the to[ of a fresh salad…I’ve heard someone on you tube say they had a jar for almost 6 years…already have several put up from the beginning of the year …you ALWAYS give such in-depth details and explain why you do what you do…love the learning process that you both so generously share…always a fan ….always learning…thanks for all you do..stay blessed 😇 ❤️

    So sorry to hear you lost a hive, but glad that the other has made it almost all the way to spring--Vermont is still very snowy and gray, but sugaring is happening, and the temps are going up, yay!! Such a hopeful time of year. I really think you will figure the bees out. What about storing them inside your Conex or "the barn in a box" you are taking with you to your new place? Not that I know ANYTHING about it. I'm always so happy to see you have a new video, doesn't matter what it's about, I've learned a great deal from your channel. Thanks so much!

    You might like your potato dumplings fried too. We like to dice them up and fried them until they get nicely browned.

    Knödel were the one food I couldn't gag down in my childhood and would have to sit at the table for hours ha - of course they came from a box though, so there's that. Yours almost make me want to try homemade and you definitely made them look delish with the burnt butter sauce and croutons!

    I have my garlic now for a year and keep adding to my jar of raw honey. Its awesome and remember to keep shaking it and let the air out, or burp it. Keep in dark area. Its awesome for sauces and also just eat a clove a day for good health. Just burp it and you won't have an issue of overflow.

    In Europe these dumpling are stuffed with pitted prunes with a dash of sugar and cinnamon. We put melted butter on top and Voila ! Knedle or plum dumplings.

    I am always so excited to see that y’all have a new video out! I have canned veggies of all kinds most of my adult life. I actually canned pickled garlic with the same additives as if I were making pickles. If you like garlic, they are delicious right out of the jar. I’m sorry one of your hives didn’t make it. Crystallized honey is a food group in my opinion. I treat it like concentrated honey. You can whip it into spreadable honey. I love the new recipes y’all try, I try some of them. I never met a potato I didn’t love. I thought the potato dumplings would be heavy, but apparently they weren’t. The brown butter drizzled on them, with sourdough breadcrumbs cooked in browned butter all had me salivating! Great episode as always. Hope your hands are better Eric.

    Hi you two this is mike A from inglewood ca. We just had a bunch of rain and now it heating up a bit. 70F degrees. Those dumplings are MASSIVE the biggest dumplings I've seen ever. You should call the worlds record company and show them how big your dumplings are . that didn't sound right .but its funny😝😝😝😝😝😝😝😝😝😁😁😁😁😁

    Thank you for another enjoyable video, I learn something new everyday😊 When I have to peel multiple garlic cloves I put them inside 2 metal or plastic bowls flip one bowl on top of the other with the garlic inside. And give it a good shake 😊 Kind of like the jar method but better to do multiples. Hope all goes smooth with your move😊👍🏻

    Similar to the way you roasted, I make garlic confit. Put the peeled and ends trimmed cloves in a saucepan, cover with oil (I use half olive half Canola), slowly simmer for 30-45 min. Cool and store in a mason jar. Great garlic oil and soft cloves ready to add to anything.
