Canning Homemade Mustard | Berry Butter & Puff Pastry Bites

  • It's time to make our annual mustard, we make two new recipes and utilize extra berries we had leftover from the fall season to make a berry and apple sauce. We end the evening with delicious Ptarmigan bites for dinner.
    ~ Spicy Yellow Mustard Ingredients ~
    4.5 cups yellow mustard powder
    3+ cups cold water
    3/4 cup white distilled vinegar
    1/4 cup white wine vinegar
    1/4 cup cane sugar
    1 whole garlic head grated
    2 tbs grated tumeric
    1 tsp smoked paprika
    1 tsp kosher salt
    ~ Sweet Brown Mustard Ingredients ~
    2 cups ground brown mustard seeds
    2 cups yellow mustard powder
    2 cups warm water
    1 cup apple cider vinegar
    2 cups honey
    1 tbs kosher salt
    ~ Berry and Apple Butter Ingredients ~
    6 apples peeled
    6 cups high bush cranberries
    2.5 cups watermelon berries
    2 cups cane sugar
    1/2 tsp each: cinnamon, all spice, nutmeg, ground cloves
    Juice of 1 lemon

    Hey guys, just a note about your pasta maker. Start out with thick setting and put dough through. Cut your dough, put through smaller setting. Repeat until desired thickness. You don’t ever need a rolling pin. That is the general rule on these machines. It will preserve your pasta maker and allow for great dough for your needs. Love all of your videos. Watching since you decided to move to Alaska. Your progression in life is very commendable. It’s all hard work and your viewers know it. Great, great, beautiful videography and content!

    Hi Ariel, awesome recipes. We too make sweet brown mustard here in India. It's called Kasundi. The brown mustard seeds are nothing but mustard seeds with the husk on. The husk gives it a more pungent taste and once de-husked, we get the yellow mustard 🙂

    Loved the bloopers! Great video. I make homade wontons and crab rangoon and you can put a little less meat on those and then fold the square over into a triangle. Before you fold, dip your finger in water and rub that around the edge, it helps the pastry to seal, and then when you bake the filling wont dry out. Your pastry looked great!

    the trick with the pasta machine is to start at the thickest setting and work your way down to the thickness you want the dough to end up with. yes, it also depens on the dough, but i think you would be able to work that dough you had down to the thinnest setting. loved the video, as always. lots of love from germany.

    I’m always so amazed by the understanding you both have of flavors and how to pair things together. If you ever have another Q&A, could you elaborate a bit on how you guys cultivated that? Was it just by trial and error and testing what tastes good together and what doesn’t? So fascinating to me.

    For a smoother tasting percolated cup of coffee add a pinch of clean crushed egg shell and a scant pinch of salt to your ground beans then perk. Cuts the acidity and bitterness from the oils it can get after sitting a bit. This is a tip from my great grandmother when she had me make her a pot of coffee. I was about 13 she was 82. She learned to cook on a wood stove.

    Hi guys! Great video. I'm a homemade condiment fan, myself. One thing you might want to add to your kitchen gear is a hand cranked food mill with a couple diameters of mesh screens. They're fairly inexpensive and invaluable for processing large batches of everything... fruit sauces, berries, tomato and tomatillo sauces, what have you. It removes skins, stems, core gunk and seeds; leaves you with a really smooth puree.

    Another great video! I started making my own mustard several years ago. The varieties you can make are endless, and the most exotic store bought mustard, can't make the grade against a basic homemade mustard.

    Sometimes I use pickle brine in place of vinegar...just because I am frugal. My family also likes red onion and chili peppers in the mustard. I can it in the smallest ball jars. You mustard looks wonderful!

    Great lead in with the drone. I wish I had vids of my Grandmother canning. Reminds me a lot of those long gone days. We use some Worcestershire Sause on our ruffed grouse, different sweet but spicy taste. The berry butter looks wonderful, could almost smell it. Picked those when I was up in the north country.     You have a noodle maker. Make an egg and flour dough roll thru the roller part on the highest setting , put flour on to keep from sticking. roll thru the thinest setting. Let dry but still pliable run through the cutter part. You have home made noodles!! Yum Yum / Love watching you two!! God Bless Kathy

    Im not a mustard lover but I actually find honey mustard is great to add to so many dishes for a flavour uplift . I loved your apple berry butter recipe , it looked so wonderful and I could almost smell it !

    I always leave the apple peels on when making apple butter. If you cook it long enough, when you blend it, you can't even tell that there were peels in there, and it enhances the flavor. Love the mustard and berry butter!

You guys try out a new recipe, it doesn't turn out exactly how you thought it would ane you just own it, you go with it, you don't re shoot the scene with a perfect ending and I love it.

    Puff pastry is so good. I wouldnt have thought of making homemade mustard. The ptarmigan bites looked good,

    I hope you know that the mixing bowl you said was porcelain is actually pyrex? As is glass, not ceramic. And in case you're curious, the pattern on your bowl is called "Butterprint" and was one of the original pyrex designs, made between 1957 and 1968. It is also what's called a "Cinderella" bowl because it has the pour spout/handles.

    I was just talking with my mother yesterday about Watermelon berries and how we havent had them in years. Glad to see them on your channel. Really miss living in Alaska where I could get those and Salmon berries.
