Great question! I stopped removing the membrane a while ago, it gives the ribs some structure and insulation especially when your heat source is below! In this case the seasoned membrane became nicely charred, crispy and a delicious treat. I was wishing there was more of it.

I smoked some Snake River Farms wagyu beef ribs last night using Maggi as a binder and incorporating Worcestershire powder into the rub. The bark was phenomenal. Thank you so much for introducing me to these products!
