I got a Weber Smokey Mountain for my 40th birthday 10 years ago and used is only a couple of times. Your videos have reignited my interest and I’ve already been to our local Costco and bought pork ribs and beef ribs. Your videos are so easy to follow and I can’t wait to start smokin’. Keep up the great work Troy and hi from the North East of a usually cold England 👍
Do grilled brisket tacos (the best) 1.) Slice raw brisket thin 2.) Season with season all or lawrys 3.) Grill on high heat (watch for flare up's because of high fat content) 4.) Using a clever chop meat (because of toughness) 5.) Serve on grilled corn tortilla (chopped onion, cilantro, lime, and salsa opcional) Creamy green salsa (most people think it has avocado but its a lie) 1.) Grill 5 jalapenos 2 serranos 2 cloves of garlic and a 1/4 onion 2.) Once charred blend everything together 3.) Crucial step slowly drizzle canola oil while blending to emulsify (if oil seperates stop and remove excess oil and reblend) 4.) Add salt to taste (even though it has a lot of peppers it is not a very spicy salsa. Really creamy in texture)

Looks delicious T-Roy. It was your videos that lead me to purchase the 22.5 WSM, and I can say without doubt it was the right choice. I continue to be surprised by the great food I make on it. And you’re right about those temps. I did my first overnight cook on it a few weeks back, I was only up once in the night to adjust the vents! Take care brother!

I haven't used my offset since I got my wsm 22 last year for 100 bucks. I don't know why people even use fans on it because it holds temps so good. You are the reason I got one 👍👍👍👍👍

Loved this video man. Reminds me of old times. I noticed your handle on the WSM is getting a little dried out. Pro tip: a few coats over the next few days of boiled linseed oil will make it look good again and protect it from the elements over the years. Keep up the good work bro!

Hey Troy I have a question as a new WSM owner. I have the 22.5 and love it. My question is I did a pork butt on it and try to maintain a low and slow cook on it in the smoke range listed on the gauge from the factory. However the grill grate was reading 270°F and rose to 300°F at the end of the cook. The charcoal that was used was B and B competition briquettes. I put a whole bag in and performed the minion method to cook the butt. Also the bottom vents were closed to maintain the temperature. I'm just curious if I should use less charcoal to maintain temperature or is it the charcoal that is just burning differently then Kingsford Blue as the B and B briquettes are much larger. Maybe you can do a video comparison with one of your BBQ Brothers.

Great video, your content never gets old. I have an 18” WSM and a RecTec 700 pellet grill. Bored with the pellet grill. Retired my 18” WSM till today. Kinda small for brisket and spare ribs. Thinking of buying a 22” WSM or the Primos XL. Big price difference. Looking for you advice 22.5 WSM or Primos XL. Looking forward to your thoughts. Thanks
Hi T-Roy, I’m from Northern Ireland and I’m looking to get my first smoker. I’ve been strongly considering the WSM 18 but I’ve recently seen another smoker called ProQ Frontier which looks similar but comes with a rib hanger in the lid and also the cooking chamber can be split in two parts which I suppose could be good for fuel economy for smaller cooks. Do you know anything about these smokers and if they are as good quality as the WSM? I like its features a lot and it’s a bit cheaper over here, but if the WSM is the better quality and more reliable smoker then I think that’s the one to go for. Can’t wait to use all the tips from your videos.

T-ROY i’ve had my WSM for 3 years and use it maybe ~8 times a year. I cannot get the temp to stay down. I’ll do minion method charcoal, barely crack the vents (or even close 1 fully), and my thermometer can’t seem to go below 275-300. If i close 2 vents all the way, it has snuffed my coals once, so i’m not sure if you have other suggestions
Didn't clean your grates from last cook? Cold water in the pan? Raw meat on a beautiful wood cutting board. Maybe I will look for a beef rib recipe elsewhere

I mean do you order it frozen online or get it locally? I can't seem to find good meat locally, or maybe I am just looking in the wrong places. I need some guidance on where to buy the best meat. T-Roy!!!! Man it’s been a while. Since I last messaged you I have (according to the Mrs) certainly moved up the cooking ladder. So have you notices the spices we buy are always the same ole ingredients, salt, pepper, garlic.
I'm happy to hear you are getting better at your cooking skills. That makes me proud and it's the reason I make videos. I enjoy teaching others how to up their game, but I still make mistakes myself. Each piece of meat is different, so it's never the same cook time after time when it comes to BBQ. Yeah, most rubs do have the same ingredients, but they each have different amounts of those ingredients which gives them slightly different flavors.

It does keep moisture inside the cooker which helps promote a good bark, but it also is a heat sink which stabilizes the heat and helps maintain temps. It also provides for indirect cooking in the WSM. I appreciate you watching Austin! Cheers brother!

My question is I did a pork butt on it and try to maintain a low and slow cook on it in the smoke range listed on the gauge from the factory. However the grill grate was reading 270°F and rose to 300°F at the end of the cook. The charcoal that was used was B and B competition briquettes. I put a whole bag in and performed the minion method to cook the butt. Also the bottom vents were closed to maintain the temperature. I'm just curious if I should use less charcoal to maintain temperature or is it the charcoal that is just burning differently then Kingsford Blue as the B and B briquettes are much larger. Maybe you can do a video comparison with one of your BBQ Brothers.

Great video, your content never gets old. I have an 18” WSM and a RecTec 700 pellet grill. Bored with the pellet grill. Retired my 18” WSM till today. Kinda small for brisket and spare ribs. Thinking of buying a 22” WSM or the Primos XL. Big price difference. Looking for you advice 22.5 WSM or Primos XL. Looking forward to your thoughts. Thanks

Hi T-Roy, I’m from Northern Ireland and I’m looking to get my first smoker. I’ve been strongly considering the WSM 18 but I’ve recently seen another smoker called ProQ Frontier which looks similar but comes with a rib hanger in the lid and also the cooking chamber can be split in two parts which I suppose could be good for fuel economy for smaller cooks. Do you know anything about these smokers and if they are as good quality as the WSM? I like its features a lot and it’s a bit cheaper over here, but if the WSM is the better quality and more reliable smoker then I think that’s the one to go for. Can’t wait to use all the tips from your videos.

Five hours to taste this delicious short ribs? I do not have a smoker but I have a Weber kettle. I will definitely try it.
T-ROY i’ve had my WSM for 3 years and use it maybe ~8 times a year. I cannot get the temp to stay down. I’ll do minion method charcoal, barely crack the vents (or even close 1 fully), and my thermometer can’t seem to go below 275-300. If i close 2 vents all the way, it has snuffed my coals once, so i’m not sure if you have other suggestions
Didn't clean your grates from last cook? Cold water in the pan? Raw meat on a beautiful wood cutting board. Maybe I will look for a beef rib recipe elsewhere

T-Roy!!!! Man it’s been a while. Since I last messaged you I have (according to the Mrs) certainly moved up the cooking ladder. So have you notices the spices we buy are always the same ole ingredients, salt, pepper, garlic.
I'm happy to hear you are getting better at your cooking skills. That makes me proud and it's the reason I make videos. I enjoy teaching others how to up their game, but I still make mistakes myself. Each piece of meat is different, so it's never the same cook time after time when it comes to BBQ. Yeah, most rubs do have the same ingredients, but they each have different amounts of those ingredients which gives them slightly different flavors.

what does the water pan do inside the smoker. ive never understood but they all have it? it just adds moisture? T_Roy plz advise a big fan lol
Yes, it keeps moisture in the cooker.
It does keep moisture inside the cooker which helps promote a good bark, but it also is a heat sink which stabilizes the heat and helps maintain temps. It also provides for indirect cooking in the WSM. I appreciate you watching Austin! Cheers brother!
