I really appreciate how simple you make this Mongolian beef dish. Last week, I bought a chunk of beef from Costco, cut it into slices, and froze them in bags. It's perfect for this recipe. I plan to try it either today or tomorrow. One modification though: I'm going to use the leftover starch from coating the meat to thicken the sauce. No waste, tasty, and it will leave me satisfied.

Thank you Flo and Dude. One thing I also often do with beef stir fries is marinate with sine baking soda to tenderize. More oft when I slice a little thicker. Probably not needed when sliced as thin as you have here.

On the TH-cam Channel "Made With Lau", after slicing the beef in the same manner, he washes the beef to remove the hemoglobin, then adds baking soda to a marinade. Then, he makes the sauce, but does not use the marinade in it. He also uses flank steak. Do you have any comments on Chef Lau's variation?
Mr Lau was a restaurant cook for over 50 years, so I’m sure he has a tonne of tips up his sleeves! I’m just a humble home cook making tasty meals for my family.

If I have leftover dredge I put it in a ziploc bag and label it and put it in the freezer for next time.

Yes… I keep my knives are very sharp (well… actually Dude does!) and I slice the steak at an angle across the grain.

I think red and green peppers would be great and lots of sliced onions. You could even, after off the heat of course, throw in some bean sprouts too.
@brianevans8529 We normally have simple Chinese vegetables on the side as a separate dish.
The "Woks of Life" guy (Bill) cleverly says you can use the remaining cornsrarch from dredging the beef for your thickening slurry
