Used to be a place near me (i moved). They did the same thing; baked the crust quick on both sides then built the pizza and cooked it.. It didn't make a huge difference right away but what was awesome was that it never lost its crunch. It was as perfect right out of the oven as it was 30 minutes later (which is rare for thin crust). Ive been making pizza for 20 years, learned from my dad, and this is the first time I've ever heard someone else talk about the approach of cooking the dough before saucing. Our secret is using a secret "undersauce" (olive oil, garlic, onions, herbs etc) that you bake into the dough a little, and then put the sauce on with the toppings and cheese. This guy gets the method, can't speak to the pie itself but he knows what's up.
Yes, for home bakers trying to get a real crust: Preheat oven to 550. Roll out (or stretch) thin your dough on a pan. Bake the crust for 5 minutes. Pull it out. It should have little golden-brown patches scattered about. Sauce it, Cheese it. Top it. Bake it for 7-10 minutes more. As good as it gets with a home oven.
Not necessary to take it out if you cook it on the bottom rack on a steel, with a sheet pan on the top rack to keep the broil element from overcooking the top. If you don't have a steel on a stone, put the pizza in the oven on the bottom rack on a sheet pan (the kind with one flat side), cook it until the crust has solidity, and then slide it off the pan directly onto the bottom rack, turning it around every minute or two to evenly brown it. If your dough has been fermented for more than a day or two, you'll get better results.
Absolutely love the man and love the place. He told his son to make sure he took care of the pizza before getting in the picture. You can tell this is a place that puts TLC into each pie, regardless of who customer is. Pie looks amazing too. Definitely will try when in the Phoenix area next

I grew up in Chicago, but I swear.. there are soooo many unique/ auth Chicago/ NY style pizza places out here. Ridiculous amount of choices.

I went to this place today and let me tell you it lived up to what I hoped it would be. The owner was there putting in the work and he couldnt have been nicer. Definetly the best pizza Ive had in Arizona and Ive had quite a few.

Dave, wishing you a Fantastic Friday. I recently told my wife this was one of the better slices in the area so we went here for dinner. She was absolutely terrified with the amount of flop and likened it to me in the sack. She saw a tanned up Paisan working hard behind the counter and instantly left me to become exclusive with him. I took the kids here today. Great pizza and great owner! Nice and crispy to the last bit. The owner said he only makes 35 pizzas a day he cuts them down to smaller slices. 15x15 is whole pizza. 36 bucks for a whole cheese pizza.

Mouth opened wide corner crust shivering as you go in for the kill. It could be a picture B/W-color sepia toned, artistic colors like painted picture. The visual is classic. More than anything is that Dave has love for everyone. That's what I like most about him. There has to be more pictures with Dave with his fans than of fans pictured with Elvis or the Beatles and Dave is richer than Elvis and probably at least 2 of the Beatles if that tells you anything.
