These are not celery stalks but cardoons. Kharshoof in Darija. They belong to the family of thistles and are related to the artichokes. They’re so good for you, especially for the liver detox. I’ve never seen cardoons in the US supermarkets. We eat them mostly in a lamb or beef tagine. 😋 My mom always freezes them for me when they’re in season in Morocco til I visit. So, the soil in Morocco does seem to play a key role in growing larger celery as well. Celery isn't a traditional crop in the rest of Africa, or much of sub-Saharan Africa, although you could ofc see it popping up in urban gardens there.

Actually the pot roast was done Moroccan Style with the prunes and everything the onions and all the spices. I wanted to make sure my husband enjoy Thanksgiving his style he's moroccan.

That plant is not celery but cardoon ( cynara cardunculus). In darija we call it " kannarya".
