That's a great way to use up vegetables. It is also very economical to use low sodium Better than Boullion since I usually use my vegetables before they start to go bad.

Better than Bouillon is a great option for many. But if you have sensitivities to additives, it isn't the best option :)

@@AMindFullMom Kristin, I'm wondering if ALL Better Than Bouillon has additives one might not want. However if you DON'T have sensitivities to any of the ingredients, BTB is a wonderful source of all kinds of different broths - good as ingredients or if you want a cup of something to eat. I like the Better Than Bouillon products because I can make just what I need. When using some of the canned broths (e. g. Swanson's) I always seem to have some left over. I refrigerate it of course where it often stays until it spoils :-(. I think I just counted 28 BTB options. A number are low sodium and others vegetarian.

Yes, fresh mushrooms work great! They aren't quite as flavorful as dried, but I am all for using what you have
