    This guy cooks everything I grew up on. Pops from Oklahoma and Mom from Pennsylvania. I don’t know how they learned to cook your southern dishes but I am so glad they did and that I did as well. Some of the best food is down and dirty basic goods just like this classic.

    I get off from work tired as hell but this is so simple to make, I made it yesterday and I loved it. Now it it’s one of my favorite things to make. Thanks Stalekracker for teaching me how to cook.

      Smothering is a specific type of cooking from Louisiana (essentially braising) Alot of homecooked cajun dishes are smothered

      I would also add some vegetable stock and a little roux, or brown, or onion, or mushroom, gravy packets and served in a bowl over rice.

    I use my instant pot in hotels all the time when I'm out of town working. Always get people questioning where that delicious smell if coming from.

      Ya need a Trangia 25. Collapses down to the size of a bowl about.
      But is I believe 8” a nonstick frying pan, 2 pots , a pot/pan handle an an upper an lower that holds the pot or pan an the burner.
      Weighs like maybe 1.8pounds or so. Runs on alcohol. Roughly 30 minutes run time on about 1-2 ounces of fuel.
      Can make anything.

    Would you be interested in learning to make carnitas? It's a very long process. But it's the real deal. My family is from Michoacan and I got a guy making them for my wedding in 3 months. It take about a day and a half to prepare and cook right. But I think it would be some good content for your channel to see how real carnitas are made.

    Tried this myself...same exact rice cooker...takes multiple cycles...potatoes never quite seem to cook. Don't need a cracker because the potatoes are plenty crunchy.
