Stems are the individual instrument/audio tracks of a song. When recording a song, each instrument will likely be recorded onto individual tracks so that they can be edited individually - so I could have one track for a guitar, one for vocals, one for bass, etc... Then these individual tracks will eventually be rendered into one final audio file (like an MP3 of FLAC file) to create a song. When people want to remix a song, they might want access to the individual stems in order to open up more creative possibilities. Out of curiosity, folks might also want the stems so that they can hear the audio layers individually or, like in this case, hear the song without certain layers (such as the vocals).

Excellent question! Unfortunately, it probably is a "narrow" mix. This is an amateur mix that I put together using publicly-available remix stems. The stems didn't include individual instruments but rather groups of instruments with their own stereo settings. So I couldn't pan one instrument without panning multiple others. I tried to pan the instruments similarly to the original song but, with instruments being grouped together, my options were quite limited. And so, I had to keep the mix "narrow" as panning stems, with the intention of moving individual instruments left/right, would often result with unintended extreme panning of other instruments.
