    finally a good garaetteok recipe! I made these without tapioca starch before and they were really bad (I also didn’t habe glutenous rice flour😅)
    this time I made it woth rice flour and just replaced the glutenous rice flour with more tapioca starch and it worked really well! thank you for this recipe🤗

    This looks easier than any of the other recipes I’ve seen today… I have lots of flour & hate the notion of starting from scratch with rice 😅 if anyone is still around would you tell me if the flour in step 1, is being toasted dry, or is cooked with water? I figured dry but I thought it would intensify the flavor, rather than remove it. So I got confused. If anyone could tell me I would really appreciate it ¡gracias!

      Muito obrigada. Não dá para substituir a farinha de arroz glutinosa porque fica com uma textura bem diferente.

    Can I avoid tapioca flour? What if I use 200 gr of rice flour and 50 gr of glutinous rice flour?

    I do not know what happened. I did it step by step, I bought the rice flour in an Asian supermarket but when I was cooking the Tteok they became extremely watery, I ran them through cold water and they were still watery and melted away.

    • @g.h.7661
      @g.h.7661 2 หลายเดือนก่อน

      If it was too watery it was likely not the right kind of rice flour or the correct ratio of different flours mixed together. I’ve used only glutinous or sweet rice flour & they ended up too too liquidy like what you’ve described. I mitigated this by freezing them, and putting them right from the freezer into the tteokbokki soup near the end & only boiling them for a short time. Then I found out I didn’t even use the right type of rice flour- there is a 2nd type of rice flour which is more dry, apparently sometimes called standard “normal”rice flour- funny because it was in a different part of the store! It’s also known as long grain rice flour in the West but all the brands in my region are Vietnamese & I didn’t recognize that word on the packaging, probably bc I cant actually read it. Once you find both types of rice flour you can use both glutinous rice flour and regular rice flour mixed together in the right ratio. But then I learned that sometimes the recipes do use only glutinous/sweet rice flour- you just have to use the Japanese method of making “mochi” to do it. This seems more simple but involves a of steam & smashing the dough over & over & kneading as you would making bread, which causes a chemical process that creates gluten in the dough- the part of the dough that will keep the glutinous flour stuck together. Which, if you used it, you needed more of in your own recipe. I reccomend looking up Babish tteokbokki recipe, and in one part of it he shows how to do this, and all he’s using is glutinous rice flour, water, and a microwave. It looks very time consuming but I want to try it
