Kerry Ellis, Joanna Ampil, and Lea Salonga are my three favorite Fantines on your list. Though it sucks that you couldn't find a bootleg of Patti LuPone or Ruthie Henshall. I loved both of them. :(
As for the Jean Valjeans, my favorite is Colm Wilkinson, but Simon Bowman comes in as a close second.

Patti LuPone is the best at this one. Not in this clip though! Lea Salonga was the worst one here.
