Rhode Island Clam Cakes

  • A childhood memory that I cherish to this day. I loved Rocky Point growing up and miss eating clam cakes there.
    INGREDIENTS
    * 2 1/2 cups Cake Flour
    * 2 tsp Baking Powder
    * 1 ½ tsp Salt
    Wet Ingredients
    * 1 Egg
    * 1/2 cup Clam Juice
    * ¼ cup Milk
    * 8 Ounces Chopped Clams
    Other Ingredient
    * 3 cups Frying Oil
    * Salt for seasoning
    * Lemon Wedges
    Lemon Aioli
    * 1 cup Mayonnaise
    * 1 tbsp Lemon juice
    * 2 tsp Lemon zest
    * 1 clove Garlic minced
    * Kosher salt to taste
    INSTRUCTIONS
    * Sift the dry ingredients together, then place them aside.
    * Combine the egg, milk, and clam juice in a medium mixing bowl.
    * Stir in the clams
    * As you gradually incorporate the dry ingredients, stir well until sticky ball forms.
    * Heat your peanut oil to 350 degrees Fahrenheit
    * Test the oil first by dropping a small amount in the oil about the size of a dime.
    * If it sizzles rapidly, then it's hot enough to fry the clam cakes.
    * Fry the clam cakes until golden brown.
    * Dry with paper towels and season with salt
    Lemon Aioli
    * Combine all ingredients and mix thoroughly

    Ahhh, the Rocky Point memories. My sister and I would be jumping out of our skin because my father always insisted we'd eat first. The chowder in the large aluminum tureens and bowl after bowl of clam cakes and plates of watermelon. I have the recipe for the chowder and boy does it bring back memories! You need to show people how to do the Olneyville New York System dogs...with coffee milk.

      I love that it brought back memories. I have begun looking for the hot wiener needed to make the system dog. Funny I have Autocrat in my house because my daughter loves coffee milk. The video will come out end of May or June

    rocky point closed back in the 90s we had en of year high school trips and even companies had the company picnic there with free lobster

      I want free lobster. Lol. I haven’t been back since the mid 80’s. The restaurant I thought was still open.

      Yes then opened a rocky point shack on post Rd, closed due to covid? Now have recipe, I worked there and had it, can add double or like me 4x the clams, if make chowder, use all the clam liquor from both and keep adding to container, cohaugs liquor stronger, and bottle stuff watered down, still have some for stuffies, of course restaurants can't do it but at home, better 20 clams in clamcake than 2 lol👍

Was just saying adjust recipe meaning if make own, I wasn't really clear, just memories got carried away. was there last day, also there last day Ricky point chowder hall closed, Tommy's clam shack is way better, everything is great there, kids and grandkids go to beach and the shore so I still get free fresh seafood when do lol. But when out with brother we stop at Tommy's, even daily specials better than any restaurant I've had👍

    I've seen many remnants of clam cakes just outside the radius of the Spider ride.

      I use cake flour because I prefer the cake like texture you don’t get from AP flour.

    I remember Rocky point, the clam cakes the winner was one with 3 clam bits lol, the chowder if you got 5 clams you win lol. Dad always paid for us all anyway 🤣😂, I understand restaurants, even the closed rocky point house on post Rd, have to make money, but adjust recipe 🙏, I add 2 lbs clams to clamcakes, and use cohaug mixed with clam juice from clams, the rest juice carries over to very clamy chowder, and with rest of cohaugs make overloaded stuffies with all liquor from clams, 👊, but restaurant would have to charge $40 for 1 stuffie, 6 clamcakes, 1 cup chowder lol. But great recipe I had, worked there, hope don't get in trouble lol. Everyone will get idea from recipe, adjust as may, if do fried clams with bellies, baked stuffed shrimp and baked stuffed lobster, you have my anniversary feast🤣😂. I'd shuck everything and pour all liquor through strainer, so strong, then make everything, the baked stuffed shrimp and lobster would have crab, chopped flounder, and remaining liquor. I'm hungry now lol, glad your getting word out, and memories of rocky point 👊

    Problem. You do not give quantities of ingredients and how long to cook them. The double ferris wheel was my favorite ride there. I loved the clam cakes.

      I grew up in CT. We called them fritters. In RI they are clam cakes. I’m well aware.
