You could see the, "Ah, there it is" moment in Paul's eyes, when he ate the marrow from that incredible steak. I have never eaten bone marrow. Looks awful, but definitely will try it someday, given the opportunity before I die. Love Paul and his cooking and places he's gone in his travels. He's a lucky man and has worked hard to get there. Never thought I'd want to go to Baja, other than fishing, but that restaurant is incredible.
I saw that look too. Bone marrow is delicious. It's creamy and rich like foil gras. It's in the middle of every bone so ask a butcher if they have leftover bones. They might even crack them open for you. Just cook in the oven. People feed lamb roast bones to their dogs without scraping out the marrow first. Such a waste.
