I don't know why but TV chat shows from the 1990s seem more dated than the 1980s. I was a teenager in the 1990s...theres no way I'd have watched this then, only now can I appreciate the content and Christopher Lee and Hammer Films are amazing.
There seems to be no music at all in the 90's talk show's (other than maybe the start and end). I kind of like it in hindsight, it makes it all about the guests and what they have to say. Things since then seem to have been tipped towards the presenter I think.
I love the human - Christopher Lee, but his analysis of brilliant writing making something funny is in error. There are those who just cannot do funny, regardless of the writing. That he succeeded in performing comedic pieces is a testament to his excellence as a performer, combined with the excellence of the entire team that was surrounding him.
His always listed the film Count Dracula as his weakest film, but I found that to be one of his best. The film was a reboot of Horror of Dracula (which I think is rather mediocre).
If you’re talking about the Jess Franco film, I can personally see why he said that. I think he enjoyed the idea of playing the Count the way Stoker had written him, rather than the character of Dracula that Legosi (and of course Lee himself) had helped to popularise, so he was thrilled by the offer of a more book accurate film. The problem was, it was super low budget, and Lee himself said that it simply wasn’t made the way it should have been because of that. Even for a European film, and even for a Franco film, the abuse of the zoom is excessive, and you can see just how quickly it was made. That’s probably where the frustration comes from, the wasted potential of it. Again, watching it, you can tell it’s cheap as chips, but there is enjoyment to be had in it, and I love Lee’s performance, it could be argued that it’s his best as Dracula! Can’t agree with you on Horror of Dracula though, I think the film is a masterpiece!

Canadian cinema has the same problem with being pigeonholed, that's why so many of SNL's best cast were Canadian, the canvas is bigger in the US.
