  • Hello Friends, I am Ruby! In today's video, I'm excited to share the secret recipe of a universal #GaramMasala that I use in my #cloudkitchen. This isn't just any Garam Masala; it's a carefully balanced mix of Indian ground #spices that brings life to any dish. Each spice in this blend-some sweet, some pungent, some strong, and others highly aromatic-plays a crucial role in delivering the flavours that define classic Indian cuisine.
    I will walk you through the basic nature and role of each spice used in this Garam Masala, ensuring you understand not just how but why these spices are used. Plus, I’ll share essential tips and tricks to preserve the essential oils and aromas of the spices, maintaining their robust flavours.
    Here are the #ingredients of Garam Masala :
    - Whole Coriander (साबुत धनिया) - 1/2 Cup
    - Whole Cumin Seeds (साबुत जीरा) - 1/3 Cup
    - Black Cardamom (मोटी इलायची) - 7-8 Pcs
    - Green Cardamom (छोटी इलायची) - 25 - 30 Pcs
    - Cloves (लौंग) 12 to 15
    - Black Pepper (काली मिर्च) - 1.5 table spoon
    - Cinnamom (दाल चीनी) - 2 Sticks
    - Mace (जावित्री) - 3 to 4
    - Nutmeg (जैफ़ल) - 1/4th pc
    - Bay Leaf (तेज पत्ता) 6 to 7
    - Fennel Seeds (मोटी सॉंफ़) 1 table spoon
    - Star Anise (फुल चकरी)- 2 pcs
    Optional (for mughlai dishes)
    - Long Pepper (पिप्पली) 3/4 th spoon
    - Dried Rose leaves (सूखे गुलाब के पत्ते) 1 tablespoon
    Important Tips :
    1. Extract moisture from the spices before grinding them.
    2. Heat/Roast them mildly on low flame
    3. Heat spices separately according to their nature.
    4. Cool them completely before grinding.
    5. Do not run mixer grinder regularly as it produces heat.
    6. Excessive heating may result into extraction of essential oils, hence loosing their flavours.
    7. Store garam masala in an air tight container.

    Generally used Garam masala which is used in all dishes coriander seeds is not added because it’s added separately to all dishes according to requirements and dishes

      Tej patta bahut mild sweet and spicy hota hai and masale ko neutralise karta hai, iske kuch health benefits hote hai, digestion ke liye achha hota hai, is liye takreeban har item mein dalte hai.

Ye type karte hue khayal araha hae, achi quality ka tej Patta source kar ke apne masala cabinet mae pata nahi kub ke rakhae leaves kae sath compare karunga chabba kae aaj. Tej Patta sirf ritualistic tareeke sae he dalte aaya hain ek time ke subzi kae garam masale ko mixer mae ghoomne layak banane kae liye, jaise pehle sukha Dhaniya dalte thae. Par ab sukhae dhaniye ka swad samajh araha hae. Tej ka taej nahi samajh aaya abhi tuk palate ko.
