I made your wings for family dinner tonight and words cannot describe how delicious their were, crispy on the outside, juicy on the inside with the right balance of sweet and salt. Not to mention they're feast for the eye. As a native Hanoian I thank you for making these very useful videos.:)

Hi Helen! Greetings from Southern California! I am second generation Vietnamese American who has been experimenting with recipes at home so I could cook for my family instead of taking them to Vietnamese restaurants. I want them to love Vietnamese cuisine as much as me and food made at home with love is just more flavorful and enjoyable. I tried this recipe over the weekend and my family LOVED IT! It was juicy and tasty just like you said! I can't wait to try more of your recipes! My only criteria for recipes is that it must be quick and easy and this was perfect! Thank you so much again!!! My family has already asked for a repeat!

I have tried deep frying on high heat before, and the wings turned golden brown too fast while the inside was not cooked through. Some other cooks suggest blanch/poach the wings before deep-frying but it is rather time-consuming. In the end I decided that the method in this video worked best for me :) Thanks for sharing your thoughts anyway :)

Helen. Woman, you are teaching me to reconnect with my culture through food. Your cooking closely resembles my mom's so it reminds me of home. I take pictures of my cooking to show her and she's in absolute delight that I'm learning how to cook more Vietnamese dishes!
I'll end my rant by saying, I made these and it is sublime. So freaking good. Very crispy, not too salty or overpowering with fish sauce at all. Thank you and please always keep cooking. Maybe post more veggie dishes because I'm old and need more healthy things in my life. =) Thanks!

Very detailed. Like how to lay the chicken in cold oil in the pan. Also not to overcook the fish sauce sauce. Lots of people would have left those details out. Can't wait to try this one as well.

so the wings can be cooked through. If you put in hot oil, chances are that the wings are golden brown but the inside is not cooked yet

    Hi Helen!
I've been living in Saigon for two years now, and I've tried this dish many times at various restaurants. Your recipe is better than anything I have tried here by miles.
I was skeptical about whether the chicken wings would stay crispy after dipping them in the nước chấm. Boy, was I wrong.
Thank you for sharing this amazing, world class recipe.

When I am Vietnam I have Canh Ga Chien Nuoc Mam at least once a week. I have not been able to travel to Vietnam for three years now, thanks to Covid, and have been cooking them. Recently the Vietnamese store started to carry Red Boad Nuoc Mam from Phu Quoc and the difference in taste between it and the fish sauce I was using before is WOW. I tried you receipe and it is so good... When I am not sure how to cook something Vietnamese it is your receipes I look for.

To my experience, prep works and cooking with lot of love are two essential elements which can't be missed to produce a great dish. Meditating with a smile while doing a "time consuming" preparation will keep you forever looking young and beautiful as you are.
