Julia Child was likely the TV chef who was most influential - However any time you ask who was the BEST of all time - that is subject to interpretation - and personal choices. Also note that even in the USA - there were MANY show that were show regionally - and NOT nationally.
The Food Network has degraded into a reality show circus over the past decade -- more and more about low-intellect, "personality-driven" competitions, and less and less about teaching people how to cook -- full of hype but little substance. It is deplorable!
I learn more from my favorite TH-cam chef Charlie Andrews who is also out of New Orleans. I have heard it said that with TV chefs, it more about entertainment.
Emeril, IMO, was the guy who started the slow but sure downward spiral into hell for FN. It was interesting and cool previously until it turned into a celeb driven, catch phrase fest. The old stand and stir shows were far better, more educational, and fun. Two Fat Ladies, David Rosengarten, and the like were great. Now it’s just another contest show after another, same crap as any other network, few really educational shows (Ina Garten being the notable exception). Food Network stinks, BAM!
Emeril to me was real, he motivated me to cook at home instead of eating out. My food is healthier, and I've become quite the "Foodie" myself and another gentleman at work have fun at the job cookouts.
I’m a New Orleans girl and we are blessed in this area to have the best cuisine and ingredients on the planet. I rarely watch the Food Network and those (lame) cooking competitions anymore. I can cook better than the majority of those “chefs” who have a cooking show on tv anyway.
The real reason is he announced on his show that he refused to do Iron Chef America because he did not EVER want to be considered a fast cook. I do miss his show with Doc Gibbs and his band.
Letting Emeril go was the single biggest mistake in television cooking history. The reality show cooking contests got old quick, and besides cooking is a art, not a competition. What once was fun turned into a circus on crack
Back in the 1990's , Emeril was probably the ONLY reason I personally would watch Food Network. So yes Emeril did quite a bit to bring it to a high standard . Also my Son, who has Aspergers ( High Functioning Autism ) LOVED watching Emeril and would go "BAM " right along with Him . We tried out recipes at home .He brought INSPIRATION to my Son and I Thank God for that. BTW: My Son today is 29 and a great Cook !
Emeril is THE reason I got excited about cooking AND still am to this day. In fact I still cook with his excellent cookware too. Both he and his cookware have served me greatly and a big "thank you" goes out from my heart to Emeril! Thanks for putting this video together.
Emeril taught me a lot,. I wish he was still on today, he had a way of teaching that was one of a kind. Competition shouldn't be in the kitchen, Listening, learning, educating, and testing to get it right. Emeril is A+ in my book.
I don't even watch Food Network anymore. I see they have Rachael Ray back for a few episodes of 30 minute meals and the Englishman is coming back to do Restaurant impossible. The older shows is what made the Food Network.
Alton Brown has to be one of the best. Genius level chemistry skills added to food history , incredible cooking skills, and Monty Python style humor is just the “recipe” for the best Chef.
I also liked Alton Brown in his earliest shows. However even he got off track later on. I always liked Ina - because She made elegant meals that I can also make - I can cook - so I don't really need to learn to boil water. BUT - and this is going to be laughed at - Mario Batali - in his show Molto Mario - had those "guests" - most of whom really had no clues about cooking - BUT OFTEN they would ask a question - not always about regional Italian - and Mario would spend time explaining them in the best of ways. He also picked up a trait from Lydia - by asking himself questions - and answering them that really helped.
Lagasse was more than just a great chef who taught many cooking secrets to his audience. His experience as a drummer made him a great entertainer, as well. He had the whole package to make a great show that will one day earn him even more in residuals, as his shows are re-aired.
Food Network was great back in the 90s and during Emeril's time; and before Emeril Live he had a "regular" cooking show and he was CRAZY and hilarious. Now, there's better content here on youtube.
I remember that show too. Ironically I wondered about the term frugal and what seemed like frequent use of wine in cooking (not particularly frugal, in my opinion)... but today it would never work, because today's youth have such limited vocabulary that "frugal" would be gibberish to them... not to mention a generation that spends $700+ every 2 years for the latest iPhone, would by definition, have no clue what frugality is...
@@ronlewis8398 - Using wine in a recipe doesn't necessarily mean they use a $100 - 200 bottle of wine to cook with. I don't think "frugal" is always just about the cost of something. It can mean knowing when to use something. I guess it can be different to someone else.
Emerill Lagase too me was a child hood inspiration. Not just for cooking, but he taught important traits about character. Truly a compassionate and charismatic man.
I remember his first show on the Food Network. It was called How to Boil Water and was for beginners. It really didn't show his immense talents. I don't think the network knew what they had at that point!
The Food network sucks now. I used to watch it daily for years Emeril, Batali. Lidia, Rachel, Alton and yes iron chef. Bobby never impressed me. I stopped tuning in...too much competition crap.

Emeril Live was cool, loved watching it with my dad when I was younger. Genuinely entertaining experience. The only thing I didn't like was him blaming Obama for perceived failures of his at one point but that was ages ago. He hasn't said much politically since then, which is good. I would welcome a return to form for him if he were to reboot Emeril Live.
@@beamersbeamer6514 that's a pity dude, if that is indeed true? Then he needs to do some re-evaluating of his life and realize who it was that helped him get to where he was.
I love Emeril, no one can do it like him....Bam! Thank goodness those videos are still here on TH-cam. I use to watch him on television and he knew how to entertain a crowd. Loved The Doc Gibbs Band, that was pure innocent fun, learning and a wonderful time. Rachel Ray did learn from him, she was good for awhile, but she talked way too much; and especially over her guests. I don't even know if she's on the air anymore. The only cooking shows I watching are Cooking with Valerie, and The Kitchen.
Emeril Live got cancelled because it got old and stale. The concept was great when it started but the same lines after 10 years don’t work. “ You’re not gonna hurt my feelings”. Bobby Flay has been with the network since day one. He had the first show, How to boil water. I started watching Food Network on day one and have watched it ever since. It’s been a good ride but I miss some of the original shows such as the Essence of Emeril and Taste. Least of all let’s not forget Alton Browns arrival, that had just as much affect on the rise of Food Network as Emeril.
Emeril was a sensation, a superstar chef. He made the Food TV Network when it was in it's infancy. Emeril had the talent and charisma, but seemed to get a little too big for his britches at some point. I love the format of the old cooking shows where a real chef teaches you how to cook. His demise on the channel was a harbinger of the shallow crap that they started programming. I haven't watched the Food Network for 15 years, can't stand it. There are some great cooking channels on youtube now, that's where I get my fix. Much love to Emeril for teaching me how to cook New Orleans food with proper technique and have it be fun.
The problem is, they took Emeril off because of costs? But Bobby Flay had like 4 shows by 2007....why not cut back a cook who can't pronounce jalapeno correctly?
So basically they wanted complete control over his brand name so they dumped him when he wouldn't renegotiate his contract. Uh yeah good decision on his part.
One of my favorite celebrity chefs because he simply loved people. He embraced black culture as well. I actually cooked for him in New Orleans. Born and raised there. So I was naturally influenced to be a great cook or a great chef. I attended culinary school a few blocks from his restaurant. Although I never work from him, he came to our school. And think us for helping out with a large banquet he had. He was super cool. He even said his trademark "bam!" Before he left.
All the people saying they lost viewers because your shows are gone are correct, but they gained a lot more of the younger generation that are hooked on video games and go out to eat, because "they don't have time to cook.", but they do have time to watch game shows...
The story should have been said like this, "Emeril Lagasse started the TV network with his style of cooking along with some humor and the basics of what recipe he was cooking on the show."" Emeril's BAM got my grandma laughing so hard, bless her heart, she waited for him to say Bam and when he did, she laughed so hard she cried!! I have Emeril's cookware and I wouldn't change a thing! I have had it for several years and it looks like it will last me for the rest of my life. Keep on cooking Emeril!! Blessings to you and your family! Who needs Food Network any hooo.. (and btw, I would have much rather continued watching Emeril as to Flay and Ray.. well, ok, so I ended up watching Ray bc there was no more Emeril!) The End
Back in the day, cooking shows taught and inspired home cooks AND pro chefs alike. Now it's all competition this and competition that. Not much detail. Was one of my favorite channels. Rarely watch FN anymore.
remember when food network launched, it was emeral, Mario batali, two fat woman (yes the shore as called that, or something like, was English) and two hot tomollies. That was it. 2 years later brought more. It's been fun to watch since the early 90's
For the longest time I kept thinking cooking was hard to do, but watching Emeril do it I realized it wasn't hard at all, you just needed a bit of imagination. So I learned how to make great dishes thanks to him. But now it's all of this competition crap where everybody just wants to display attitudes. It's crap TV now.
FoodNetwork changed their network so much. They are all about competition and baking shows nowadays. That is the reality of the situation. They wanted Emeril to do more reality and competition shows like Guy Fierre does but he was not having it. I bet you if they brought back Emeril live as a reboot or even the Essence of Emeril they would do just fine. If it wasn't for Emeril FoodNetwork might not even exist....
Even though I didn't watch that much of food network growing up I will still prefer the older shows over they're contest shows they run now. Even hgtv has gone downhill
I will say this: Emirel’s restaurant in New Orleans is one of the top 5 restaurants I have had the pleasure of eating- it was more than a dining experience- The others- Apicus in Paris, Daniel’s, La Bernadine, La G and Gotham in NYC-
It's more or less just the progression of entertainment. I used to watch Emeril Live but there's not a chance these days. TH-cam has change the entertainment world. Why on earth would I watch Emeril when I could watch personally chosen channels that aren't built for the masses but more or less chosen by my own viewing choice right here on youtube. TH-cam has also pretty much killed "TV" in general for me...can't wait see the future and find out what kills youtube.
They made the wrong choice letting him go. They should have given the guy anything he wanted. 10,000 reality shows and other "celebrity chefs" can't replace him. He was what made FN special. He made both cooking and food magical. The FN sucks today. I used to watch it every night back when Emeril Live was on. I liked some other FN programming at the time, too. But, I watched it go downhill over the years and I literally hate it now. It's a shame.
How was it costing the Food network hundreds of thousands a week to produce his shows when his contract was about $333k annually? If he was advertising his own branded products on his shows then of course the network should have a right to charge for that, but for them to get a % of revenue from that is ludicrous! The real reason he left is simple. He was a mans man of a chef and the new leaders of the network that came in wanted the star of their network someone to be less masculine. Bad mistake! I never watch that channel now as its programing blows!! You cannot watch the Food network to learn anything about cooking, but if you want to see how some single mom from Cincinnati can win a bake off, then this fluffy channel is for you!
Cancelling his show was one of the worst decisions they have ever made. Everything on there is all about competition which is garbage. I don't want to see that crap. I don't even give it the time of day anymore. It should go back to learning how to cook. Thank you youtube for having cooking shows. Food network SUCKS!!! P. S. From a once loyal fan that's long gone
Personally, I still miss Emeril..., and the whole Food Network has sagged badly since he left. I don't even stop to check out the Food Network anymore, and if it folds up it's tent I just hope the slot becomes the Emeril Network instead. His combination of fun, music, and the joy of cooking and eating and sharing was terrific. Yep..., I still miss Emeril.
For those who miss the old TVFN, there is Hope, and of course it’s streaming. British and French tv shows in the style of the better educational/inspirational style abound. Watch stuff like Two Greedy Italians (fantastic, like Two Fat Ladies), anything by Raymond Blanc (very serious detailed recipes from a superb teacher, great travel segments), and the wonderful French program Les Carnets de Julie offer solace to those sick of another damned episode of Guy Fieri, in which he says “money!” For the trillionth time. Alexfrenchcookingguy on TH-cam is, without a doubt, the modern day Alton Brown, funny and fun and educational. Try both TH-cam and dailymotion for your fix.
Although Emeril made the Food Network for a number of years what it was I no longer consider it the Food Network it’s nothing but a bunch of competition now nothing like what it used to be
I think EL was a thinking persons chef. I spent a lot of thought on, how bad IS bacon fat on my system. I learned more is better through his shows. Being driven out, no-no, being priced out by reality TV though~

Miss seeing this Legend. He built that network and it really hasn’t been the same since. I don’t even watch it anymore.
Love Chef Emeril! Im not over this and don’t even watch FoodNetwork now.
Bobby Flay is the only food network OG that survived and is still striving.
He is one of the best. They need to bring him back.
Emeril live and the Doc Gibbs band was AMAZING!!! I enjoyed watching it every night....Now I dont even bother watching Food Net work channel...
He's an amazing chef! Food network was lucky to have him.
If I hear 'Bam!' One more time! Bam! I'll never have to again😆
He had a great show. He could show you how to make food, affordably and fun. I always enjoyed his show.
I'll take Justin Wilson's reruns anyday.....
You tell me that for true!
That's messed up! One of the best shows period!
Food Network SUCKS! It use to be about cooking and chefs now it is a glorified game show channel. I stopped watching both the Food Network and the Cook Channel. Food network needs to be taken off the air as it is no longer worth the time or money to watch!
It would not be that bad if they didn't have people yapping to the camera all the time. And all unnecessary graphics and ads on screen all the time.
