    I really appreciate the tips and you taking the time to share with everybody. I bought mine pre-assembled and hilariously the first thing I noticed was that pulling out that Ash bin and then getting it lined back up for the threading to catch was a pain in the butt.

    Thank you so much for posting these videos on this unit! They are really helpful. I've had mine for about 2 months and just love it. Cooked a wide range of meats and been happy with the results; I'm aiming to do a full Thanksgiving turkey here in November, since the cooking area is so big. I did want to make one comment on the controller - I feel these units vary in programming and I don't know why. My own unit has more heat settings than yours - it goes up by 10 degrees increments all the way to 410. I found that pretty strange, given how many recipes call for 225, etc (It's fine to just set it to 230, but seemed a wierd feature until I saw other units didn't do that). My only real complaint is that my unit has had some strange errors with the recipe settings - ex. it will skip the first step! I've been meaning to reach out to customer service to see if they had controller hardware updates or some replacement, its a bit disappointing they don't seem to have a plan for these types of issues. Anyway, keep up the good work!

      Thanks for the feedback! I had one person tell me that the Australian units have been adjusted as well.
      I was in Lowe’s today and noticed that the new units seem to be smaller than mine as well. Maybe there was some sort of design change as well.

    Good video. The one con i have is the seal on my door was garbage. Was loosing a huge amount of heat and smoke through the door. I ended up buying a nomex door seal to great a good tight seal.$15 problem solved. Holds heat much better now. Even in sub zero weather.

    Thanks so much for the tip on the probes! Set temp to 165 in probe 1 to alert me it was time to wrap brisket in butcher paper. Could not figure out why the smoker shut down! Roll Tide !!!

    You made much more clearly than the owner's manual that the first probe port works with the controller whereas the second one does not. Very helpful, thanks. I also got mine at Lowe's on sale for $449, one heck of a deal if you ask me. Assembly wasn't too bad, I didn't throw any tools. :)

    So I have figured out that if you slide the burn pot back in up until it stops, lift up and push it slides right in no problem! It doesn’t go in straight on it’s more of a push in and lift up and keep pushing till it drops in brotha! Smoke on my man great videos too!

    The only problem I have with it is where the probe for the chamber temp is. It’s a design flaw to
    O put it in the corner against the back wall. 40 deg difference min, from there to the middle of the chamber. Get a dial thermometer and take the logo out of the door. It’s a fantastic smoker but that is its one flaw.

      There are definitely temp variations. I try to rotate my meats periodically to compensate.

      Have the same issue. Went from an electric chip smoker to this unit and was shocked that my baby back ribs took like 7 hours to reach temp!🤬

    Great video. If you haven't done it yet, remove the bottom plates inside the unit and clean up the ash. It builds up rather quickly.

    Australian delivered units now delivered with pid controller and adjustable in 10 degree increments from smoke right through the entire range.

      Depends on if you want to be able to sear or not. The 1000 has the sear option. You pay a couple hundred extra for that I think.

    Great video. Very informative. I was looking at getting into cooking some brisket, pulled pork, etc. Tragger was high on my list but doesn’t seem to actually smoke. Is this a good alternative? Thanks!

      Burns clean. Thin blue smoke. If you want more you will need to get a smoke tube.

    Good video. Now i bought my pro series about 3 months and im able to set my temps 10 degrees at a time. So i can set at 260, 270 ect. Also on mine you are able to drain your pellets out of the chamber from a small opening in the back of the unit. But you cant get all of them and i complain that its harder then it should be. Dont know if they changed a few things since i got mine 3 months ago. I still get better bbq out of my stick burner but this makes it easy when i dont have all day.

      Just got one last week - have not done my burn in yet - but on initial test - it looks like i do *not* have the more granular 10 degree settings. Bummer. Honestly - while it would be nice - i can make due with the gaps.
      I wish pitboss would be more forthcoming with what is going on with these controller differences. Hello? Pitboss? U there?

      Depends on the winter. Holds temps pretty well in 20s and 30s. May struggle in temps lower than that but you could cook at hotter temps to compensate.

    Put a cover on the smoker. I live in SD. We get wind, rain and snow. My Copperhead series 3 sits on my patio year round. I always have pellets in the hopper and keep the unit covered when not in use. Going on two years never had one single pellet problem

    Great review. Got this same smoker last week and a few of the cons you mentioned were also concerning. The fire box did not want to insert all the way in and when I finally got it in the screw on the bottom wasn't perfectly lined up and took some finagling to get it to work. Not sure why Pit Boss dozen't fix this angle issue. Also the computer dial jumping in large increments was confusing at first. I wanted to cook at 275 but had to choose 270. Seems it would be easy enough to allow for more finite control HOWEVER... Those things aside like you mentioned it's a great smoker and worth every penny.

      Hello, my friend! Thanks for watching. At least your newer unit has 10 degree increments. Mine jumps straight from 250 to 300. Definitely seems that since low and slow is the name of the game, there would be 1 degree increments between 200-300. Or at least by 5.

      Yes they have this all backwards. Same issue with mine. I ended up laying it on it's back on hand rail, loosening the screws, and nuts ,reinstalled the drawer. Pulled everything around to wear it screwed in . Then had my wife hold everything secure and tightened it all up. Works better. I wouldn't say perfect but it does work. Took about 20 minutes. When they describe this in the instructions, and its upside down the manual should have us put the tray in first and line everything up before we tighten it all.

      @american smoke, how would I find a replacement latch for this unit? I’ve tried everywhere!!! He bought this unit used from Lowes at half price because of the broken latch. Vice grips work great for now but…..

      I’ve seen people use latches similar to these. Some people have issues with the door ceiling off so they put these above and below the factory latch.

    I have never been able to get my ash can to go back in right since I've had it. I love my Pit Boss though,it is by far the best bang for the buck.

      I had the same issue. After I enlarged the holes in the back of the pot (where the igniter and auger are inserted) with a dremel tool, it goes in easier and isn’t as tight. Hope this helps.

      @@TheAmericanSmoke I don’t know how cold it gets where you are but tonight it was about 40 F and when set to 350 it would only hold 310-325. Even after holding the prime button for one cycle, it would come up to 350, but settle back to low 300’s.

    Great review!! I have always smoked on my gas grill or Weber kettle. I like my Napoleon has grill for grilling and rotisserie with IR, but wanted something for smoking specifically.
    I picked up this Pit Boss today. Spend a bit of time with assembly. I can't wait to use it since I have never used a bonafide "smoker". I'll let you know of the range of my possible temp settings.

    I've watched several videos of different folks reviewing these smokers. I just got mine today and assembled it myself without issues except the ashbin screw thing just WILL NOT thread in. So, I'm with you, looks like it will work fine without the screw. The one thing I find missing from all these videos is HOW to thread the meat probe--if you put it through the door, it will screw up the seal. The only other thing I can think of is dropping it down the chimney. Where do you put yours? And, why didn't Pit Boss just put a couple of holes that could be covered when not in use?

    Hey man - love the vids. Going to get one of these myself. How much height is between the racks? I like to do multiple 10-11 lb shoulders at once. Is there enough height clearance between the racks to do this?

      From the bottom is 3.5, 5.5, 5.5, and 4.5 inches. I don’t think you will have much trouble with multiple shoulders at all.

    This is an old video from a while back. I have a Pro Series II 4 like yours. Pit boss sent me the new controller for it. The temp starts out quite low and increases in 10 degree bumps all the way up to high. AKA 190, 200, 210, 220 etc. Fairly easy install. Everything color matched. They didn't include a new rubber gasket so you need to save the one from the original controller. It's a plug and play install. Everything color matched. I'm 80 years old and technologiclly and mechanically incompetent and I was able to do it myself without calling on my grand kids. I think you would like it as it gives you much better control over your temps.

      That’s one of my most common questions. You mostly going to get a thin to light blue/grey smoke from this unit.
      If you want more smoke, get a pellet tube.

      @@TheAmericanSmoke no we opened the door and there was no smoke. It’s the 3rd time I used it and I know that only occasionally I smell smoke if I have the unit at 2:30 or 2:50 some smoke will come out the chimney and there’s always smoke when you open the door. There was no smoke. I’m not positive what went wrong with it. The first time I used it was a low and slow 24 hour smoke. The next time was only a few hours. Decent smoke both times. This time there was no smoke. I let the unit power down, then started it back up and some smoke started to happen then. The ribs were only slightly smokey, because the first two hours there was no smoke.

      They have fixed the control panel on this unit to adjust in 10 degree increments. However, the newer version of this Pro series is even more precise.

      I’ve gotten great results from my Pro Series. The Competition series is solid as well. For $800 you should be able to find a unit that suits your needs.

    Hi. I'm considering this same smoker but have a question. Since we have to clean the inside of these every few cooks or so, is there a way to clean in between the inner and outer wall since that is where the smoke goes? If not, won't it eventually get clogged with smoke and moisture?

    Wanted you to know, I watched a few of your videos while standing over unit before purchase.... the lady that helped me saw me wheeling it to check out & said, “you finally decided on one, huh” - my reply, “yes ma’am, this guy on TH-cam solidified it for me. So, many thanks !
    One thing I’m not getting a handle on is, the S (smoke setting). My thought would be to set temp to where it’s needed and go, which would include smoke throughout the cook. Anyway, you could help me understand the smoke setting more clearly? Is it an indecent feature lets any temp involvement?

      The “S” setting is the lowest setting. Usually keeps the chamber around 130 degrees. I use it it get extra smoke flavor on my food. Sometimes , I cook on it for an hour or two before raising the chamber temp to the desired temp.
      You will get smoke regardless. But not as much.
      I have learned to use a smoke tube to make up the difference.

    Do you think they can reprogram it now? Also if you program the programable meat probe to say 275 will it keep to that team fairly accurate so that you can cook at that temp?

      The new units have more accurate temps. I spoke with customer service a few weeks ago and there is still nothing that can be done for my version of this unit.
      The meat probe only monitors the internal temp of the meat and can shit down the heat of the chamber once temp is reached or also ramp it up if you so desire.
      There is no way to set my unit at 275. I wish there was though.

    I have a separate propane grill and a coal smoker that are old. Would this unit be a good way to replace and get the best of both worlds by purchasing this smoker?? in other words, it can do very much what a standard grill can do also correct?

      Everything but direct heat cooking/searing. You can get a barrel type with a sear plate, as opposed to this vertical.

    Hi all I have the 7 series vertical I’m having temp problem I set it to 250 and the pit boss control says 250 and it will heat up but the temp where the rack is a swing from 240up to 280 up and down up and down up and down Where should the water pan be over or below the pit boss thermometer

      I keep all water below the protein. My thermostat is at the top of my unit.
      Water should help to regulate the temp but it’s going to fluctuate. Remember, it’s not an oven. It requires burning pellets and forced air to heat so there will be changes in temp. The important thing is the average temp, and that’s what your thermostat is going to show you.

    Do you dump the ash tray while you’re cooking ? Pitboss says that the unit must be cold to dump it. I’m afraid it will fill up before the food is finished during 12-15 hot smoke.

      Not if I dumped It pre cook. I’ve done 14 hr cooks and been fine. These things create minimal ash. It’s always surprising.
      I always make a point to clean out pre cook and everything goes fine.

    I got this for my mother's day present to replace and old master built that had finally kicked the bucket, have used it several times since then and love it except the diverter tray doesn't divert the grease back towards the grease catch. It's running down the front and under the box and is coming out of the bottom onto the ground and in the ignition section and caught on fire once. Have you had any issues like that? If so is there a work around you might suggest? I called Pit Boss and they were super nice but didn't have a solution, I'm under 90 days so probably going to return it back to Lowes but I'm so bummed about it.

      You could get them in there, but there wouldn’t be much space to place food on them. There would also be the issue of no extra slots to hold them.

    Seems the Aussie units are all having issues with reaching max temp and the probes are very inaccurate, have you had any problems with your probes

      No problems here. My probe has been pretty spot on so far. I was told that the Aussie units have more accurate temperature settings for cooks though. So there is definitely a difference between there and here in The States.

    Just got my Pit Boss and it seems pretty loud. Protective cover around fan was dented when we got from lowes but everything around the inside of fan looks normal... Trying to gauge just how loud should this be? Feels like i can barley talk to somebody close

      I have. I have also used the Pit Boss version. I like both.
      When I use them I mix them half and half with whatever pellets I choose.
      Charcoal provides its own unique flavor.

    Question, will this smoker survive outside with a cover. I live in Virginia and we experience all 4 season here. So does this smoker need to be put inside a garage or indoors, or will it be safe being outside with just a cover?

      Depends on your definition of safe. It’s made to be ok outside. With a cover I don’t think you would have much of a problem. If I were you I would put painters tape around the seal of the pellet hopper if your going to leave it covered and unused for a while. Do that and you should be fine.

      I live in Missouri and we also experience all 4 seasons. I have mine on a covered but not enclosed porch. I use the pit boss brand cover and leave pellets in it at all times since new. I have had no issues and love mine. I have also had mine for over a year now.

      Hey! Depends on the unit. You’re probably aware, but you can only burn pellets in this unit.
      Wood chips are going to burn faster and put out more smoke flavor in a shorter time, but over long cooks pellets are superior, in my opinion,
      While you can only burn pellets in this unit, you can always use a smoke tube to get more smoke and more smoke flavor in during your cooks.

    I haven't looked at other comments on this or other videos in the Pit Boss playlist. But, how does this smoker handle in cold temps if you experience those where you are?
    Does it maintain temp well, do you seem to fight to keep it at the temp you want?
    Traeger has their P-setting, does Pit Boss have something similar to modify the auger on/off times/speeds to help maintain temps when its cool to cold out?

    This weekend in the middle of my smoke, we got a rain storm and a clogged gutter dump all over my smoker. I started losing temp quickly, I got it covered but never could get the temp back.. i shut it off and let it sit then tried again after it stopped raining, still no luck. I let it air out all day today and tried again but nothing. I took the pellets out the best I could, but I don’t know how to clear the auger. Do I just shop vac them out or is there another way? I cleaned the temp probe as well. Help!! Thanks!

      Empty your ash pot. Turn on the unit and hold the prime button for 10 sec or more and several times. After that, take out the pit again and see if anything is being pushed through.

My temp on the smoker panel is wayyyy off from my ThermoPro.. I am wondering if the prob needs replaced. I’ve gotten some prob errors in the past and I’ve cleaned it

      If the glass is clean, you food is easily viewable. This unit puts out clean light grew to almost blue smoke. It should never be dark Grey or overly cloudy inside the chamber.

    I have cooled three times on this unit: garlic butter shrimp, fish and pork ribs. In all three smokes it never got any smoke flavor. I used the smoke function for thirty minutes on the pork and smoked for three hours. Zero smoke flavor. Any tips? Extremely disappointed.

      4 years with an electric smoker. A small master built. Had to feed chips a lot but meat came out nice and smokey flavored. This pit boss smokes on smoke setting, thin blue smoke at 225 but absolutely no smoke flavor.

      The reason I asked about your experience, a lot of people say the smoke flavor is mild compared to other types of smokers. People with no prior experience have no complaints.

      I like the flavor of my food. I use a smoke tube for meats that I want a stronger flavor on.

      If you add a gasket to the door it helps a ton! As American Smoker said smoke tubes can help a ton as well.

      They do not. They redesigned the newer models to offer more temp control, but I don’t think there is Much hope for units like mine.

      No. They changed the dimensions and several people have reported to me that the newer units have 10 degree temp increments.

    I wish they added another higher shelf so I can hang ribs or a turkey. I tried hanging ribs and couldn’t do it

      @@TheAmericanSmoke I would say do it. Different and might be better tasting. I’ll wait for the next video. And the control board, I have the new one with 10 degrees increments and I LOVE IT. Call the app customer service and tell them the app isn’t connecting at all. They will do couple tests over the phone with you. Whatever you do tell them the app isn’t working. Once that happens they will send you a email and fill that out and 2-3 weeks later you get the new control with the 10 degrees increments and you keep the original control board as backup

    Is it possible to turn the fan off while smoking with this or set it to run intermittently ?

      No. The fan pushes air over the burning pellets and that is the source of the heat and smoke. The fan has to run constantly.

      @@TheAmericanSmoke yes... I read that some units allow you to turn the fan off and the smoke just rises naturally without the airflow.
      The constant airflow has that convection effect which tends to dry meat out a bit faster.

      @@931tow I just got off the phone with Pit Boss Customer Service and the answer is still no. Other manufacturers may have something like that but not Pit Boss.

      It does not, and as of today, there is still no replacement for the control panel on the 2021 versions of this unit. I just spoke to Pit Boss customer service. I have been told by some subs that the newer version of this unit does have more precise temp controls. However, I make awesome food on this unit.

      I'm looking at getting this model. Sucks the temps are off but seems to be across their entire line. My uncle's Louisiana vertical (same company makes both) is same 20 deg off. Needs to set 20 higher

    I've had nothing but problems with this unit. My unit hardly ever gets enough heat to reach 250. This one has been a nightmare for me since day one.

      I hate to hear that. Mine had been all but problem free. I assume you got it at Lowes? They should swap out the unit for you if yours is faulty.

      @@TheAmericanSmoke oh yeah I did, they pointed me to Pit Boss tech support, their parent company Dansons, who keeps sending me new burner pots. I'm at the 2nd one replaced and it still never comes up to temperature. I've left it preheating for 2 hours before, and it just churns through pellets and never makes it up to whatever I set lol. I found your video looking for others having similar issues lol, and I'm kinda glad others aren't having trouble, but frustrated with the brand at the moment

      Try opening the vent at the top a lot more. Counterintuitive but it needs more airflow to burn pellets to create more heat.

      @Review How To so sorry, I’m just getting/seeing the reply. it Sunday afternoon. Yes, you are able to shop vacuum everything under it as well as under the shield itself. I’ve never had any issues with ash or ash on food, I know people say that but I just make sure either after a long cook(7-8) hours or (2-3) short cooks under the 6 hour timeframe I remove it and clean it all up!! Pretty easy even from a usable one arm guy!😂. It’s heavy but doable.
