    This cake in Cyprus is called shamalli, your recipe stavros is spot on perfection the real old traditional way of Cyprus, thank you for your great passion in carrying the past preseny. ❤

    A delicious dessert.. I often make it in both winter and summer (we love it with ice cream on top). Instead of lemon juice I boil the syrup with 2-3 orange 'cups' in it. And I use some orange juice in the cake, along with a little soda instead of baking powder. I will try your version with great joy!     My niece just got back from a trip overseas including Cyprus with her family. As they were away for her 13th birthday, I wanted to make her something special from her trip as a surprise. My kitchen is filled with the most beautiful smells. My favourite part of your recipe and video was the authenticity especially in using glasses to ensure-just like our Australian grandmother who was such a good cook. Is there something I should serve with it tomorrow such as cream or thick yogurt or is it eaten on its own? Thank you again from Australia.

    Thanking you so very much for answering and explaining but I live in France and I have never saw this. today i was wanting to make your lovely recipe . Can I make it without using Mastic powder? Or can I replace it with something else? Thanking you.

      Hi RaymondGimay, so sorry I've missed your comment.... Yes you can make it without the Mastic powder, no problem, but it Will not taste the same. You can find it in any Turkish, Greek or very large Supermarket (like Carrefour), they should have it. Good luck! Please let me know later on how did you get on. Also, please keep safe and well.       Hi Ptricia, Thanks for visiting!!! I Hope you can find the Mastic in the Greek or Turkish shops. You can find it in "All around the world food" stores, also!! Now, here we go....
      Mastic is a resin obtained from the mastic tree. In pharmacies and nature shops, it is called Arabic gum (not to be confused with gum arabic) and Yemen gum. In Greece, it is known as tears of Chios, being traditionally produced on the island Chios, and, like other natural resins, is produced in "tears" or droplets.
      Originally a sap, mastic is sun-dried into pieces of brittle, translucent resin. When chewed, the resin softens and becomes a bright white and opaque gum. The flavor is bitter at first, but after some chewing, it releases a refreshing flavor similar to pine and cedar. (From Wikipedia, the free encyclopedia)

      Good morning Georgina, Thank you for visiting and lovely comment. If I were you I will not use self raising-flour or coconut, unless you are making a coconut cake. You can use milk, but I find using yogurt makes the cake more moist and acid taste. Use the same cup you are having, for all the ingredients. One cup = 245 ml.     Be nice if you show a step-by-step guide to putting in ingredients..... we can estimate but better showing u put them in instead of off-camera
