We always cooked them in the "old" pressure cooker! Only once, did the lid come off before the full pressure was released. The lid & the sauce flew up to... the ceiling... I was sent to my room because I didn’t stop laughing. Grew up on these and I make porcupines often. So good! We use tomato soup instead of sauce and regular rice. Simmer for 45 minutes on the stove. I gave up browning them years ago. Sometimes I slice up cabbage and place it on top of the porcupines as they simmer. 😋 💕

Is there a Meals On Wheels program near you? It’s not free, but not exorbitant either; and they provide enough food for one person to feed two seniors for lunch and dinner. I worked in seniors’ care for years; and proper nutrition was always a concern. It’s way too easy to fall into the “sugary tea and toast and jam” trap once home cooking becomes too difficult.
Porcupine Meatballs are the ABSOLUTE favorite of both my nieces. From childhood it was their requested Birthday Dinner, Special Event Dinner, Or just if they got to pick Dinner! There is actually a really cute story in the family. My mother made the recipe and she got it from her great grandmother......so it's old in the family. 25 years ago, my oldest niece wanted to invite her boyfriend for a "Meet the Family" dinner. She asked me to fix Porcupine Meatballs, so I did. He came in and was very nice, and charming. Very nice young man and we all liked him. We sat down to dinner and started eating and he took a first, somewhat hesitant bite....then dug into them! He loved them. As we were having dessert he remarked, "That was an amazing dinner! Where do you buy porcupine meat, I don't think I've ever seen it in the store?" We were stunned into silence for a good 30 seconds and then my youngest nice (sister to the older one) started to giggle. Then we all laughed. We told him how the dish was made and HE cracked up! All week, from the time he heard about what we were having for dinner he had been a nervous wreck about having to eat porcupine meat! I told him I was impressed with his bravery at having the courage to try them. He looked at his girlfriend and then said, while blushing, "some things are worth it." They married about 2 years later. They have been happily married over 20 years, have a 16 year old son and a 5 year old son. Now HE makes the family recipe of Porcupine Meatballs as well.....and loves them just as much as the rest of us!

The best way to cook pot roast is by a slow cooker, imo. The meat falls apart, and the flavor is out of this world. I have made it every way there is, and I find this way to be the best. Your meatballs look delicious.
Or by oven roasting in a cooking bag at 250 for 6 hours minimum depending on the size. We do this and season with a packet of Lipton onion soup mix. The gravy and flavor is awesome.

I was a junior high and high school English teacher. When porcupine meatballs were on the menu, I used to kid my kids and ask how many porcupines did they think gave their lives for our lunch. The kids would guffaw and say, "It's hamburger!" I asked, "Are you sure? My grandma used porcupine meat in hers... They were really good." I never gave in and by the end of a short discussion, I always had a few students who weren't... Quite... Sure... Good times - great memories. ♥️
Melissa, I'm just like you ~ I've not only never had porcupine meatballs, I've never heard of them and my mother never made any kind of meatball either! We occasionally had spaghetti, not often, but when we did she made a meat sauce, so tell Tom there are probably many of us out here just like you in regards to the meatballs! LOL!

I don't use instant rice in mine, just long grain white rice, and I also put in some celery salt, but the rest is the same. I put 2 Tbsp of brown sugar in the sauce. In fact, I made some the other night, and we just finished the rest of them for lunch today.
That's what I remember. Mom used long grain rice. She also added chopped celery and green pepper. We were a family of four, I'm sure she was trying to make the balls bigger. She also added brown sugar plus a touch of vinegar.. a sweet and sour thingy.. Take care. 😊

My mom made these while I was growing up. We didn't have much money and this was a fancy dinner. While my kids were growing up, this was one of the repeat meals. When they come to dinner, they request porcupines. Now, my grandchildren enjoy this meal, too.
The title drew me in, Porcupine Meatballs. A Dish I have not had in over 30 years, but something we grew up with at our family table. Back then we used a pressure cooker and a lot more paste. After getting married, we tried them a few times but fewer times than a holiday meal. Thanks for sharing, guess I'm going to have to do some skinning soon. LOL!

This recipe brings back sweet memories of when my son was a little boy. I learned this recipe back then and we loved it. Also I remember the recipe that you're using being identical to the one I used. I liked looking for recipes with fun names like "porcupine meatballs" and let him help make the dish. We had so much fun and made wonderful memories. Now I'm a grandmother and a great grandmother. We all love to cook together. The love of family...doesn't get better than that.🥰

I made them starting in 1965, when I found the recipe on the back of the Minute rice box. I lost the recipe card I cut from the back of the box a long time ago, but recently I went online and found it. I cooked them in a covered frypan on top of the stove and loved them. I've been watching all the devastation the storms have caused and sadly seeing all the people who are now homeless due to the rain, flooding, wind, tornadoes and the hurricane ☔🌩🌪 Tom, sad to say but my mama wasn't a good cook either. I learned to cook and bake when I was 9-10 cause she was always sick. My dad wasn't a great cook but he could make some delicious meals. I especially loved his fried Mush with pancake syrup and also his Bean Soup that he made from scratch...yum Now my grandma could make the most delicious bread and rolls. As a child I was amazed watching her just use her "hands" not measuring cups to make her bread recipe. Grandma and Grandpa would also have a vegetable garden and would can most of the vegetables and also make relishes, pickles, and jams and jellies. My mom made this often. The recipe was very much like this one, except that she used rice that was cooked to “just tender” and rolled the meatballs in the cooked rice, so that the meatballs looked the most like porcupines. We kids all loved them! I’ve never made these for my own family. I think it’s time I did. 🙂
Hello Tom and Melissa! Watched your video on Porcupine Meatballs! I was very surprised at how simple they were to make and how delicious! The sauce was the biggest surprise! Just tomato sauce, water and Worcester sauce seemed to be runny and bland! Boy was I wrong! The ingredients from the meatballs flavored and slightly thicken the sauce perfectly. We loved them and have made this recipe 3 times!!! I’ve also shared it with my girls to make for their families! I’ve made so many of your recipes and enjoyed everyone! I was blessed to have been taught and allowed to cook with my Mama, my Memaw, my Grandma, and my Aunt Maggie.They did not measure, nor do I unless I'm baking. They cooked by sight, by feel, by smell. My Mama was the first one in her family to go beyond high school. She went to Nursing School. I owe all of these amazing women a debt of gratitude. All of them have gone home to glory. My Mama passed away in September of 2020. So you'll know since the first video of yours I watched I've always felt welcomed, as if I'm a neighbor sitting in your kitchen. I had never heard of these before, I asked my sister if she had before you showed the ingredients. She said " oh I haven't thought of Porcupine meatballs in a long long time." She said they used hamburger and cooked Rice a Roni to make the meatballs. But we do have minute rice in the pantry, I bet these are on the menu real soon.❤ ❤❤❤

My mom made these when I was a kid. They were one of my favorites. I think mom used tomato soup for the “gravy”. The porcupines were browned in a skillet and then transferred to a dutch oven, with potatoes and carrots, to be finished in the oven. Mom never wrote this recipe down for me (she rarely used recipes). She passed in 1991. Haven’t had porcupines since then.

My dad was from West Virginia and his family moved to Kentucky when he was small. He taught my mom to make these …she was from Pittsburgh and that’s where I was born and raised. These bring back wonderful memories, thank you for sharing! ❤️
I love porcupine balls. I make them a bit bigger (like puffy ovals) I use 1/2 sleeve cracker crumbs and 1 egg no onion, just powder. For the sauce I use 2 cans of tomato soup with 1 can of milk. Makes the sauce creamier and a better gravy for the taters! I love your recipes!
These were a staple in our rotation growing up in the sixties. The sauce was different though, more like what you’d have with cabbage rolls. In a pinch we’d add some bottled “chili sauce” (Heinz or similar) to tom sauce and yes, Worcestershire sauce. The recipe was maybe from Better Homes and Gardens Cookbook or something like that. Makes me very nostalgic.

Melissa, the Instant Pot is a very easy to use electric appliance that has a pressure cook feature. It took the fear of pressure cooking away for me. You may want to consider buying one to recreate your mother's pot roast recipe. It has several other features, including s,ow cooking, so it's usefulness isn't limited to pressure cooking.
I’ve made these my whole life, learned from my grandma. We always rolled the finished meatballs in rice too. Never used Worcestershire sauce but will add that next time. My children are grandparents and they still love my porcupine meatballs.

Those look delicious! My mom would make these. She always used regular ground chuck, but she browned them first on the stove, so some of the fat rendered out. Her sauce was an 8-oz can of tomato sauce + 1 cup ketchup + beef broth and Worstershire sauce (aka "dubya sauce" in our house).

Technically. It doesn’t matter to me but with you being a teacher I thought it may matter to you.

My mom used to cook them. And i still do. I cook them completely on the stove, brown them on all sides, and cover with tomato sauce. Add lid simmer for 45 minutes or so. Then, serve them on a bed of mashed potatoes. KILLER!
This may have started in WWII when meat was rationed? Coming from a large family in the 50's, 60's 70's Cut down on meat needed to go farther for 10. Mom used condensed tomato soup as well to have a thicker suace. Thanks for the memories. Need to make!

Both my mom and grandma used to make these when I was a child. I remember them being so good. I remember a Dutch oven being associated with them, but otherwise, don't remember anything about how they were made. They must have used ground beef with more fat content because I do remember having to skim grease that was floating on the sauce. Even so, they were delicious. Thanks for the recipe.

We'll I didn't have everything so I had some risotto rice with mushrooms and I had marinara sauce. I cooked this in the pressure cooker. I live in Arizona it's to hot to turn the oven on. Porcupine Meatballs was a recipe that was included in Presto Pressure Cooker manual. It used tomato soup. We ate them alot.

The title drew me in, Porcupine Meatballs. A Dish I have not had in over 30 years, but something we grew up with at our family table. Back then we used a pressure cooker and a lot more paste. After getting married, we tried them a few times but fewer times than a holiday meal. Thanks for sharing, guess I'm going to have to do some skinning soon. LOL!

This recipe brings back sweet memories of when my son was a little boy. I learned this recipe back then and we loved it. Also I remember the recipe that you're using being identical to the one I used. I liked looking for recipes with fun names like "porcupine meatballs" and let him help make the dish. We had so much fun and made wonderful memories. Now I'm a grandmother and a great grandmother. We all love to cook together. The love of family...doesn't get better than that.🥰
OMGOSH…Can’t wait to make this. My mother use to make porcupine meatballs and stuffed bell pepper and we loved, loved, loved. If I remember correctly they were about the same so far as ingredients. The difference was one in a pepper and the other into ball form. I am so excited with this. Thank you to whom ever it was that shared with you.

I always look forward to our family reunion because one of my cousins makes such good porcupine meatballs. She uses some type of bef gravy and it's delicious. She brings them every year cause she knows I love them. God bless you and Melissa always.

Growing up we never had porcupine meatballs maybe because Mom was Polish! I have never made them but will try this recipe because it is simple!
Made this for supper tonight. I used 80/20 and believe me, very good. The leftovers will be used with spaghetti tomorrow. You give me ideas for supper, and I do appreciate it.

I made them starting in 1965, when I found the recipe on the back of the Minute rice box. I lost the recipe card I cut from the back of the box a long time ago, but recently I went online and found it. I cooked them in a covered frypan on top of the stove and loved them. Thank you for reminding me again about these delicious meatballs. I serve them on rice.

I've been watching all the devastation the storms have caused and sadly seeing all the people who are now homeless due to the rain, flooding, wind, tornadoes and the hurricane ☔🌩🌪 Tom, sad to say but my mama wasn't a good cook either. I learned to cook and bake when I was 9-10 cause she was always sick. My dad wasn't a great cook but he could make some delicious meals. I especially loved his fried Mush with pancake syrup and also his Bean Soup that he made from scratch...yum Now my grandma could make the most delicious bread and rolls. As a child I was amazed watching her just use her "hands" not measuring cups to make her bread recipe. Grandma and Grandpa would also have a vegetable garden and would can most of the vegetables and also make relishes, pickles, and jams and jellies. I haven't made Porcupine Meatballs in years so this will be a good addition to the meal rotation. Enjoyed the response✍ you sent me from my comment. My mom made this often. The recipe was very much like this one, except that she used rice that was cooked to “just tender” and rolled the meatballs in the cooked rice, so that the meatballs looked the most like porcupines. We kids all loved them!

Hello Tom and Melissa! Watched your video on Porcupine Meatballs! I was very surprised at how simple they were to make and how delicious! The sauce was the biggest surprise! Just tomato sauce, water and Worcester sauce seemed to be runny and bland! Boy was I wrong! The ingredients from the meatballs flavored and slightly thicken the sauce perfectly. We loved them and have made this recipe 3 times!!! I’ve also shared it with my girls to make for their families! I’ve made so many of your recipes and enjoyed everyone! Just finished your pumpkin bread recipe and it was a big hit! Love “ sitting at your table” with you and Melissa! You have some good eats! Congratulations on your 200K subscribers! I'm from Cloquet, MN . My family uses wild rice and tomato juice with tomato paste for the sauce in our porcupine balls
I have this recipe except mine calls for browning the meatballs first and then put the sauce on them.
Peggy, I think my mom always browned her meatballs before baking them too. I feel like this is just much easier because you can completely skip that step. Thanks for the comment and for watching our videos.

I was blessed to have been taught and allowed to cook with my Mama, my Memaw, my Grandma, and my Aunt Maggie.They did not measure, nor do I unless I'm baking. They cooked by sight, by feel, by smell. My Mama was the first one in her family to go beyond high school. She went to Nursing School. I owe all of these amazing women a debt of gratitude. All of them have gone home to glory. My Mama passed away in September of 2020. So you'll know since the first video of yours I watched I've always felt welcomed, as if I'm a neighbor sitting in your kitchen. I had never heard of these before, I asked my sister if she had before you showed the ingredients. She said " oh I haven't thought of Porcupine meatballs in a long long time." She said they used hamburger and cooked Rice a Roni to make the meatballs. But we do have minute rice in the pantry, I bet these are on the menu real soon.❤ ❤❤❤

My mom made these when I was a kid. They were one of my favorites. I think mom used tomato soup for the “gravy”. The porcupines were browned in a skillet and then transferred to a dutch oven, with potatoes and carrots, to be finished in the oven. Mom never wrote this recipe down for me (she rarely used recipes). She passed in 1991. Haven’t had porcupines since then.
I used to make these years ago. The recipe was in a little cookbook that came with my pressure cooker. They're delicious!

My dad was from West Virginia and his family moved to Kentucky when he was small. He taught my mom to make these …she was from Pittsburgh and that’s where I was born and raised. These bring back wonderful memories, thank you for sharing! ❤️

I love porcupine balls. I make them a bit bigger (like puffy ovals) I use 1/2 sleeve cracker crumbs and 1 egg no onion, just powder. For the sauce I use 2 cans of tomato soup with 1 can of milk. Makes the sauce creamier and a better gravy for the taters! I love your recipes!
I remember this dish from my childhood back in the 60's. I couldn't Recall the sauce. Glad to see it again!
These were a staple in our rotation growing up in the sixties. The sauce was different though, more like what you’d have with cabbage rolls. In a pinch we’d add some bottled “chili sauce” (Heinz or similar) to tom sauce and yes, Worcestershire sauce. The recipe was maybe from Better Homes and Gardens Cookbook or something like that.
Makes me very nostalgic.
My mom always called it "Wish you were here"sauce!! lol. Love this recipe. Always a crowd pleaser

Melissa, the Instant Pot is a very easy to use electric appliance that has a pressure cook feature. It took the fear of pressure cooking away for me. You may want to consider buying one to recreate your mother's pot roast recipe. It has several other features, including s,ow cooking, so it's usefulness isn't limited to pressure cooking.
A favorite recipe in our family. The church loved these when I took them to a potluck.
I’ve made these my whole life, learned from my grandma. We always rolled the finished meatballs in rice too. Never used Worcestershire sauce but will add that next time. My children are grandparents and they still love my porcupine meatballs.

Those look delicious! My mom would make these. She always used regular ground chuck, but she browned them first on the stove, so some of the fat rendered out. Her sauce was an 8-oz can of tomato sauce + 1 cup ketchup + beef broth and Worstershire sauce (aka "dubya sauce" in our house).

Technically. It doesn’t matter to me but with you being a teacher I thought it may matter to you.

My mom used to cook them. And i still do. I cook them completely on the stove, brown them on all sides, and cover with tomato sauce. Add lid simmer for 45 minutes or so. Then, serve them on a bed of mashed potatoes. KILLER!
This may have started in WWII when meat was rationed? Coming from a large family in the 50's, 60's 70's
Cut down on meat needed to go farther for 10.
Mom used condensed tomato soup as well to have a thicker suace. Thanks for the memories. Need to make!

I have to laugh at people complaining about you mixing up the meatballs by hand. That's the way I do it! You pronounce worcestershire sauce perfectly. That is a word I have trouble with still at my age! 😊

Both my mom and grandma used to make these when I was a child. I remember them being so good. I remember a Dutch oven being associated with them, but otherwise, don't remember anything about how they were made. They must have used ground beef with more fat content because I do remember having to skim grease that was floating on the sauce. Even so, they were delicious. Thanks for the recipe.

I have made these but I used brown gravy instead of the sauce. Cooked the meatballs a while and poured the gravy over and baked a little longer. Yum!

Hi Tom & Melissa so I don't live in town. I really wanted to make this. I know you always say. The first time you make do as the recipe says. We'll I didn't have everything so I had some risotto rice with mushrooms and I had marinara sauce. I cooked this in the pressure cooker. I live in Arizona it's to hot to turn the oven on. It turned out delicious. Thank you for sharing.
