Missed my mom, she used to cook menudo, embotido and other filipino food whe she is with us. When i watch your vids. I always craving for food..
while watching this, mama lulu reminds me so much of my grandmother that lives also in the us right now. i miss her sooooo much. she also cooks for us like what mama lulu does and it sucks because she can't go back here in the philippines because of the situation that we are in. i hope that this pandemic will end now or later.

It's very interesting to me how despite having the same roots, Filipino Menudo is completely different from the Mexican version.

Hot dog is to replace expensive meat it goes along way also when feeding a lot of people.
It's also loaded with nitrates and carcinogenic chemicals fyi. A lot of Filipinos consume a lot of processed meats without being aware of how detrimental it is to health.

As far as your "Menudo Recipe," I didn't know there was a Philippines version, especially one such as yours with your own personal touch and ingredients. When you finished cooking your menudo, and because it was making my mouth water, I came with up my own thoughts on how I'd add my own personal touch.
That would be to garnish the top with chopped or sliced hard boiled eggs, scatter a few diced white onion, a light sprinkle of red pepper flakes, some cilantro and/or green onion scallions. I might even use beef tripe like the Mexican version if I'm in the mood.
Then if I make menudo next week, I might change it up with something different depending on what I'm craving for, or whatever I have on hand for ingredients. I suppose I might be similar to you LuLu in a way. I believe there are no rules when it comes to cooking, but you better make it delicious and make enough to feed anyone that walks in the door, even if it is the whole neighborhood.
