    Hey y'all! Low Carb ingredients are more expensive than regular, but I think 34 meals for $50 is pretty good! That comes out to $1.50 PER MEAL!!! These ideas can feed smaller families for a lot longer. I hope this video helps, and helps give ideas. I love y'all so much! I hope I did this right lol REMEMBER keeping lunches simple, helps stretch that dollar!

      A neat little snack with zero carbs is fried mozzarella cheese! I put about 2-3 tablespoons in a nonstick skillet, med heat, fry till begins to brown good, i flip the edges in toward the center on 2 sides, then brown as desired. Cool and serve. Stop cooking at any stage of crispy you choose. If soft, you have a nice cheese flavor, but if you cook crispy crunchy, it’s more like a chip.
      And you can use this same cooking principle to make a mozzarella crust pizza. Cover skillet base and Cook mozzarella till brown, add toppings as desired. I have made many with various toppings! Yummy and filling!

    As a type 2 Diabetic, on a health wellness and weight loss journey, I've managed to bring my blood sugar level and A1c into a normal range and lose 50-ish pounds in 4.5 months. NO crash dieting and no starving. Just eating more sensible, making better lower glycemic impact food choices, while increasing protein, non starchy veggie, and fiber intake.
    These meals look super interesting, especially the hibachi 'fried rice'!

      I'm a type 2 Diabetic also. I don't follow any particular diet, I just do similar to you. My hope is to totally reverse my Diabetes or at least keep it controlled. I want to do it naturally and be off the meds and insulin. Better days and better health to us all.

      Nowadays some people are lucky to have 3 meals a day. And snacks are good too if you can do it. Apple slices with peanut butter.. ½ banana sandwiches.celerly and peanut butter.. in other words..PEANUT BUTTER

    My favorite part is the last meal, where you take everything you have left and just make a bunch of things! I feel like I waste so much food, because I don’t have enough at the end, so this was a great reminder that we can all have something different to use up our food! So thank you!

    PEOPLE!😂😂😂You go girl! Do what is right for YOUR family and do not apologize for it. People tend to forget they 1. Do not see the whole picture and 2. Every situation is different even if it may look the same on the surface. In one example prices and stores are different everywhere around this country. You give ideas, great ideas! Some of which I would eat and some I wont, but it inspires creativity and out of the box thinking for ingredients I do like, so is all VALUABLE. It is our responsibility to do our own research to make things work for our own families given the resources available to us in our geographical locations and our budgets.     My son has autism and was very picky. I plain couldn't afford ($ AND energy) to make him a separate meal. As soon as he was old enough to make a bowl of cereal or pb&j that's what he had if he didn't like what I made for supper. Now at 14 he's eating the majority of what I make. I think it's worth it to stay strong and teach kids to cook, many will come around 💗💗

    Your meals may actually be lower in carbs than listed if you calculate net carbs. Net carbs are calculated by subtracting total grams of fiber (carbs than cannot be digested) from the total carb count listed on the package. Low carb tortillas and vegetables tend to have a good amount of fiber.

    I dropped 21 pounds in 6 months but due to life stresses and depression gained some of it back. I am trying to return to my healthier eating habits again. Your ideas will really help me cut back on carbs, increase veggies and keep protein in check while reducing sugary treats.
    I think, when folks say there is not enough protein in a meal they are missing the fact that in this recipe alone there are eggs and chicken for your protein sources. And in other meals, cheese and beans also add to the protein count. We are not to be eating our daily amt of protein in one meal but throughout the day including snacks, so perhaps folks can use a little common sense before criticizing.
    Brooke you do a great job.

    I find when I eat low carb, I don't need as much food. I think carbs make me crave more food. Don't get me wrong, I LOVE carbs!! They must love me too because they seem to stick to me like glue!! 😉

    Brooke! Idea for the tomato basil wraps! Make the bowls, use either italian sausage or burger with italian seasonings, roast some cherry tomatoes with garlic, throw in some romaine lettuce, mozz and parm, top with a balsamic reduction! Boom! Delicious italian bowls!!!
    Edit: for some reason in my head I was thinking muffin tin size for the tortilla bowls. I should have specified! Sorry everyone!!

      I think the size was a concern to make as a bowl... but it couldn't certainly be used as a pizza base, which I guess are just plates instead of bowls. 😂

    I was so excited when I saw the thumbnail for this. I am doing low carb to lose weight for health reasons. High carb just puts the weight on me. I love your channel but can’t eat a lot of what you make but I just love you and your family. I would love to see more low carb meals on a budget and I see quite a few comments from others that would like too also. I rarely comment but watch you every day. Hoping you can do more low carb meals. And yes higher protein definitely keeps you fuller longer. Blessings to you and your family.

    At my Walmart, I always have the option online and then in person when I get there to pick up my order, to accept or reject any substitutions. They are also excellent about refunding money for something I don’t get or something I don’t like/want. My Walmart is super efficient, friendly, and rarely makes a mistake on my order. I love their grocery pickup service! Once in a while I have a problem, but it is rare. Being 71 years old with arthritis in both knees, this service is priceless to me. At first, when they would make a mistake on my order, I would get angry and be annoyed, but I just need the service so much that I try to give them a little slack 7:14 . I know some stores are worse than others, and maybe yours is still new, or still working out the bugs. Mine was at first I think. Anyway, I guess I just wanted to tell you I hope your experience gets better, I think it will. And it is a free service!

    I had bariatric surgery about 9 years ago. Getting my protein in daily is a struggle. Carbs are easy and digest into sugar quickly for me, too. I'm a type 2 diabetic and diet controlled because my A1C numbers are good.
    Just finding tasty meals that are affordable and meet protein requirements leaves me seeking help with ideas.

    This is amazing Brooke ! Hey I think you could use 3 cans of chicken and 3 eggs and make chicken Pattie’s to make chicken sandwiches Brooke ! I’m definitely gonna try it cause I love chicken sandwiches with lettuce and tomatoes and pickles !! Thsnks si much for low carb meal recipes Brooke !     Low carb or not, that hibachi chicken meal looked SO good!! Once I gave him meatless meatballs, he thought they were the BEST (not homemade) meatballs ever. I've still never told, hehe.

    I love how Dusty didn't notice the difference between the cauliflower rice and regular rice. I know you aren't doing this for a lifestyle, but if you want to make it like that more often, you can boil or steam cauliflower and put it through a ricer. Cauliflower also makes a really good "mashed potatoes" pizza crusts, etc. Believe me, I was definitely thinking that mashed cauliflower wouldn't be good, but it is! lol

    Hands down my favorite video!! Eating low carb can be done easily and yes the protein helps keep you full! It’s also fun to experiment with all the different ways to make “mock” foods! Keep doing these videos cause it keeps me inspired and you actually gave me a couple of new ideas😃

      It can be done so easily. I love how she shows that in this video. I feel like too many others complicate it so much it scares people away. Or like in the original comment, make people feel like they can't afford it. Sometimes a simple meat and veggies on the side meal is all it takes to get all of the needed macros and fill bellies.

    Brooke, I was diagnosed with Type 2 Diabetes in July 2021. I have changed everything about my eating and am down almost 200 pounds (yes, 200, it is not a typo). The combination of added fiber and protein are what keeps you full longer. I am impressed with the meals you came up and will be trying them out (minus the ground turkey because I don't like it, will substitute 93% lean ground beef instead). You are a blessing, and so is your lovely family! One question I do have, was that straight carbs or net carbs? My carb restriction is 30 per meal and 20 per snack. Thank you so much for sharing!       Congratulations on your weight loss! That’s phenomenal. I’m on the same journey as you, with about the same amount of weight to lose, your comment is so inspiring. I was dx’d in November 2022, & I’m down just shy of 50 lbs now. I have some health issues that complicate the weight loss (I’m on high dose steroids), but as long as the scale goes down instead of up, I’m a happy camper!
      I also follow the 30/15 rule. It gets tough, especially as I have to eat gluten free, but I feel incredible when I’m strict with it.

    Hubby and I eat low carb sometimes now, but less often due to health changes for him. I still need more of a low carb lifestyle, but it gets tricky cooking food 2 ways. Brooke, thank you for the ideas and ALL you do!!

    The canned chicken is a staple in my house. My youngest daughter loves it when i add dill relish, and a little bit of ranch! She eats it right out of the bowl lol. It is a favorite of hers! I also use it for wraps if I want to have an easy meal option!

    Protein is satiating and levels out the blood sugar. A high protein 1st meal of the day sets me up for a day of less snacking or no snacking. A carb heavy breakfast means I will be sluggish and hungry every couple of hours.

    I had RNY 18 years ago. Yes I need more protein and less carbs. I do it by not making casseroles with the carbs mixed in. Ex stir fry, spaghetti, tacos I put as much meat mix as I need. I also eat the carb balance tortillas and make a small pan of enchiladas for myself if I have the energy. Store bought soups have so many carbs and very little protein, so I can my own soup. For the meat in those I use meat from rotisserie chicken or cooked chicken leg quarters, pork butt on sale, venison, or hamburger on sale. We also buy whole hogs and half beef from farmers too. You can do it!

    Thank you Brooke i have to eat low carb by default because i have to be gluten free which means no bread, no tortillas, pasta and oatmeal is out for me due to a mickle allergy but those cheese tacos you made for Kallen looked yummy. I eat high protein as well so this is very helpful.

    I have some of the plastic bowls you used for the taco salads and those bowls are huge whoever keeps saying your portions are small are wrong. Beside your kids look very healthy I think you're a great cook and a great mama keep up the good work 💕

    You did good! Hubby and I are keto and we feel sooo much better. We usually are soo full we eat about 1-2 meals a day, which helps the grocery budget, as does less snacking.
    It really does change the way you feel, how you sleep, and joint pain.

    At 36:00, I swear this is what I have in my fridge and pantry rn. Making the chicken in the waffel iron was so genius and it tasted good! I really, really appreciated this video bc I have to monitor my carbs and I am on a tight budget. This is truly a struggle each day, especially with the rising cost of groceries this year.     Great video! Too many refined carbohydrates can increase your hunger, even though they are often cheaper foods. I personally am gluten-intolerant and only figured this out last year. Once I switched to gluten-free and replaced with different grains I lost a few pounds too. I could still stand to lose more, but I did the change for health and not weight loss

    I think it is the extra protein that is keeping you full! I've been increasing my protein lately, and I've noticed that I'm eating less and less often than I had been. For me at least, the increase in protein has kept me full, and fuller longer.

    You did a great job! I’ve had to eat the upper range of a low carb diet for awhile. Medical issues. You’ve got some good ideas here. I can’t eat grains and haven’t tried riced cauliflower.     Thank you Brooke for doing this!! My son (Kylen's biggest fan lol) is type 1 diabetic, so I'm always looking for way to cut carbs. His target is 60 grams per meal so he's not on a "low carb diet" but a lot of recipes are just not doable for us. Thanks again for all you and your sweet family do and share with us! You are truly a blessing to so many!!

      60 grams is still a tough target for carbs. A few family members have been told to aim for 45 and that is so difficult sometimes. Eating lower carbs will surely help your son out and he's so lucky to have you care enough to make those meals. ❤

    Great ideas for a low carb diet Brooke. U made it look super easy. I'm afraid I'd miss my taters,, cornbread, biscuits and gravy! Lol That would be hardest for me. Many of us are on a restrictive diet and u showed it could be done on a budget and taste delicious. God bless y'all and the TH-cam fam.

      You can still eat potatoes (1/2 cup serving size) and be under in a carb restricted diet! It is about progress not perfection!

    Thank you so much, my daughter is type 2 diabetic, my hubby and I usually eat a normal diet except I had gastric bypass in 2008 and I eat smaller portions. But since her diagnosis I have searched for what I could fix for her but not have to cook two separate meals. Your meals have given me great ideas on how to make a base meal and how to tweek it for her and for us. Plus I can use leftovers to meal prep lunches for her that will be easy for her to reheat. Bless you for everything! And many thanks from one Tennessee girl to another, you know we didn't grow up with mamas and grandmas making low carb\low sugar meals.
