Vietnamese have a variant of this dish where we eat it with fish sauce. Often it's filled with pork or shrimp. We call it "Banh Cuon." We often serve it with a side of pork sausage to balance out the fish sauce flavor and sliced cucumbers to cleanse the palate. It's also served with basil and beansprouts as a garnish.
Whenever I go to a Chinese Dim Sum restaurant, I'll always get the Rice Noodle Rolls.

Whoa. I've never seen purple or red rice used in cheong fun and certainly not from a stone mill. Definitely sets that restaurant apart!

I grew up eating cheung fan at wet markets. My mom would drop me and my sister at a food stall, getting us cheung fun and plain jook, while she shop for the market for ingredients to make dinner.

y'all need to drop the @ for that store that makes the stone milled version. The cheung fun in the Guangzhou region definitely is a step above the usual ones in HK tho.

Hope you get to visit China.
If you can, try Cantonese Roast Duck or Roast Goose, which is so much better than any pork dish, including
the Cantonese Roast Pork Filling here. You should be able to get these roast birds, in any area with a large
      Cantonese Community.
