- Enjoy my recipe for Tomasini: a delicious ricotta and sausage filled pastry. The full recipe can be found in my cookbook, Sicilian Feasts, but the ingredients can be found below, as always. If you make these yourself, don't forget to send me your creations!
Ingredients:
Dough
3 cups all purpose flour
1/2 cup of water
1 teaspoon salt
1/2 cup Shortening (Crisco, or Lard, one or the other or half of each)
2 eggs + 1 beaten egg to brush on top of the Tomasini before baking
1/4 cup water
Filling
1 to 1 1/2 lbs ricotta
1 to 1 1/2 lbs Italian sweet sausage
Place the finished Tomasini in a non stick baking pan or cover the pan with a sheet of parchment paper. Bake at 400 degrees for approximately 40 minutes.

Heck, I grew up on homegrown lard and homemade butter, plus homegrown eggs. Now, I'm 70 years old and still working full-time! Don't be afraid of healthy, unprocessed food! 😅
Subbed.
I like fresh, local, and in season!
Totally agree👍🏴🇬🇧
You want to live longer? stop eating all seed oils which are toxic and rancid and cause inflammation in the body and instead use pasture raised lard, ghee, butter, and virgin coconut oil or a good cold extracted virgin olive oil. Avoid statins as it reduces the necessary cholesterol the brain needs to prevent dementia and Alzheimer’s. The brain is made of at least 80 cholesterol -hormone. A healthy brain needs cholesterol to be healthy. Reduce sugar consumption. Fats are healthier for you than sugar. Eat pasture raised eggs which lowers cholesterol. It’s unfortunate that big Pharma has been misinforming humanity about good nutrition bc it’s about profits over health.
Looks great! I love your kitchen and those high ceilings❤
You had the healthiest diet!
I like the way she talk “salt, because I think I should “
“I like belts and suspenders”! I love this lady! She had a couple good ones that I’ll be stealing! These are amazing, I’ve made them many times.
Ha Ha Ha! Feel free my friend!
I'm learning Italian recipes. Thank you. Greetings from Sri Lanka.
I have very bad anxiety and it causes me not to be able to leave my room, but I saw this recipe and I just had to try it. It's absolutely delicious. I'm very glad it got me out of my shell ❤
I’m so happy for you!🌹🌹🌹Stay well and be of good cheer!!!
You might try taking some "evening primrose". Its a natural supplement that calms anxiety. If you are currently being treated for anxiety, ask your doctor before doing so, as there might be some negative interactions with medications. Please feel better!
How did your Tomasini turn out?
Wow that looks great!
This is one of the best things I have EVER eaten. I‘ve made it several times for friends and everybody loved it. Thank you for this wonderful recipe ❤
Cara Giovanna, sono una ragazza di 22 anni da Ispica (Ragusa). Che piacere vedere che qualcuno dall’altra parte del mondo cucina queste prelibatezze! Keep it up!
Grazie Mille, Marta, Forse quando si vive all'estero, ci si tiene ancora di piú alle tradizioni. Anche i nostri amici Americani gradiscono ed apprezzano la nostra cucina.
I love watching you make these wonderful dishes. My grandparents and parents were born in Italy, and while they are gone now, you bring back happy memories. Thank you!
I can’t believe you have a cookbook out! I was just thinking to myself “she needs a cookbook, I would buy it in a heartbeat” and then you announced it! Can’t wait to make this dish, it looks amazing!
My cookbook days were long before my TH-cam days! Enjoy cooking!
It is, if I may, an excellent cookbook with lots of fun and delicious recipes.
I bet it’s wonderful! Thanks for sharing. I can’t wait to try these. My uncle and godfather was from Bagheria. I hope to explore there next summer. 👍🏼
Thank you. I used to buy the fresh ricotta at the cheese factory. It was still warm! So good.
Ricotta is one of the most versatile products in the kitchen!
This channel makes me so happy
It’s a pleasure to watch you cook. You’re excellent!
Saluti Dall’Italia!! I like that you share typical Italian dishes in the very clear and easy way!! Even us Italian we don’t know all the recipes that we have in Italy ,and today I learn this 👏
As soon as I heard what Tomasini is, I am determined to make this for my mum. It is always a pleasure to watch you cook with such the casualness at home, a much appreciated down-to-earth style yet so much elegance. Thank you for the recipe Giovanna.
Thank you , Patricia, for having expressed your appreciation! I take great pleasure in sharing my favorite recipes.
would anyone else LOVE to hear these videos in italian? thank you! can't wait to make these recipes
I made Tomasini today for the first time, my Christmas savory. I'm on a low carb diet, so I have to confess my pastry was fake. Still, they were delicious for the blend of Ricotta and Italian sausage, both the taste and the texture. Thank you for the recipe and inspiration.
I just found your channel last night and I have been smiling with every video. Thank you ❤️
Thank you, cara signoria Giovana❤
Giovanna you are a wonderful Italian mamma! They don’t make them like you anymore! 1000♥️’s and the best of health and life to you and yours.
The classic recipes are the only way to go. Beautiful!⭐️⭐️⭐️⭐️⭐️
The best!
Thank you Giovanna, never really got the chance to cook with my Italian grandmother back when she was alive and I was in my 20s. You don't look or sound anything like her but it brings back memories of watching her cook and the wonderful smells. For a while on my mom's side of the family that grandma's cooking gene was attached to the hair gene. if you had the wavy/curly unruly hair than you also inherited he cooking skills.
Hehe now I'm about the same age she was when I had my first real memory of her. My parents had moved out of state because of my dad's job , came back for the holidays and grandma's dining room table was full of pizzelles, the whole house smelling wonderful. I can't stand black licorice but anise used well in recopies can be a good thing.
I so admire your teaching skill! You think of everything! I have always told my own students about the amazing artist that I met on the 17th floor of Riverside Church; one of us on maternity leave from Bronx Science, one of us on her day off from Radio City. Every week brought new anecdotes and issues, (sadly our actual teacher was quite boring) as I absorbed your love of teaching. Cooking, fiber, horticulture, artifacts...all taught by a master. Two more years 'til our fiftieth💫
Yes indeed Emme. A long friendship to be very proud of!
Hello
I absolutely love this ladies' hands. Yes, age, wear and tear. But also, how much unequaled experience, knowledge and accomplishment... and obviously, happiness not available anywhere else.
Giovanna, I love your recipes. I am buying your cookbook for my sister who will be celebrating her birthday in September. Keep the videos coming.
I 'm from Azerbaijan, Baku. I'm 64. I'm very glad to meet you in your channel❤I know english a little bit, but i understand almost everything. 👍 Also i liked your pastry. I'll learn yo make your dishes and english too. Thanks. Good luck.

Thank you for being so generous with your knowledge. I love hearing the stories about the recipes...it makes it that much more special.
This woman has a great presence. I enjoyed her instruction and euphemism.
Can't wait to try this! Grazie, Giovanna!
You'll love them, Allison!
So yummy and very good my friend Thanks for sharing this video.
Tip, Leftover Yolk: Toast some bread, pour the yolk over and a pinch of salt. It's a yummy snack for the cook.
Raw egg yolk on toast? 🤢
Not in this case; the yolk had been cross contaminated with raw sausage. In other cases, absolutely!
I can't wait to make these, my husband is going to love them.
How fantastic!!!! Simple enough to make and sounds absolutely delightful. Will make them with my grandkids....rolling dough, ice cream scooping ricotta, brushing on egg wash. Thank you so much for sharing this precious tradition!💐
I’m just delighted that this wonderful recipe fell into such good hands!🙌
So simple, so VERY clever.
Thank you. My church crowd will love this. You will be credited at the potluck as 'the kitchen on the cliff" lady. Gratzi.

Hello
The chocolate recommendation was very enjoyable thank you, yet to make but look delicious 😋
What a beautiful person you are!!❤ thank you so much for these recipes!
Yum! Thanks for sharing!
Grazie mamma! La tua lezione è bella.
They look yummy😊. Thank you for sharing🤗
At first, they reminded me of "pizza buns", which was something my mom used to bake when I was younger. They were made with bacon and some regular cheese in them. Seasoned with oregano, But this looks authentic and even tastier! I find that salsiccia, at least the ones I cook with, has the right mix of herbs. Just imagining how it would taste in a bun...
Amazing - you are so talented, thank you!!❤❤❤❤
So glad I found your channel!
Thank You I will make these this coming tuesday for dinner. Last week i made ox tail with steamed shredded cabbage, broccoli stems and carrots served over buttered egg noodles.
These look WONDERFUL!! I can't wait to make these!!
They are as good as they look! You'll love them.
Simple (few ingredients) and delicious, Riccota and fresh cheese should be a larger part of people's diets.
You made this look so easy, however I think it looks easier than it is, would like to try it though looks yummy
She is absolutely adorable!!!!
Oh! Thank You.
Fabulous recipe. Thank you for sharing. My family is going to love this
What a lovely lady!
Thank you for sharing, Nonna. Greetings from Mexico! Thanks for sharing the history about your chocolate! Hugs!
Chocolate came from Mexico to Sicily where it's still made according to the original ancient recipe! The history of food is amazing!
Yes Cioccolato di Modica i love it, and I imported them from Italy to Austria for a long time
They are the best!
You are wonderful! 😘
Never heard of Tomasini before, I learned something new today, Thank you! Would love to have you seen you take a bite and show us how good it is at the end, I think it's a good thing when chefs (or home cooks) doing cooking videos take a bite of their food at the end of every video.
This recipe is definitely on my list of beautiful foods to make ❤Thank you it looks wonderful and tasty!
Looks a-mazing thank you for sharing
Monday after Easter is a holiday in Norway too. When I was a kid, we would always go to the movies if we were in town… PS! What a great recipe, I’m sure homemade yoghurt cheese could be used too, together with vegan shapeable mince/grounds or vegan italian sausage. I make the yoghurt with coconut milk or coconut milk and soy milk mixed, then let it drain for a day to day and a half, maybe even two days for this. It is delicious! 🤗😋
Monday after Easter is named PASQUETTA (little Easter) and it's a day when people go on a picnic or open their summer houses and serve wonderful finger foods . I had Tomasini on Pasquetta for the first time and I quickly got the recipe. Sicilians also share Saint Lucy's day on December 13th with the Norwegians. The menu for Saint Lucy's day does not include foods made with wheat flour instead we cook whole wheat berries and enjoy them with honey or with fresh ricotta.
We were in Italy once, for a business trip (NATO) on the Monday after Easter. They wanted me to leave on Easter and I said no. But then I got my revenge, because NO ONE was working. Pretty much the whole week. But I was in Naples (and then Rome) and the food, the sites, and the people were awesome. Got to try their pizza!!
Great video, this lady is a natural.
The minute I saw this video I knew I had to try this recipe! They're in the oven now & I can't wait to try them!
How did they turn out?
@@woofljh They *are* good.. But they definitely need to be salted. The crust was a bit tough for my liking, so next time I think I'll salt both the dough and the cheese ( as well as add basil or something to the cheese.)
The recipe gave me so many ideas though: Puff pastry pockets filled with the mixture is just one of the things I want to try.
love it! I love cook for my family and this will knock their socks off
Thank you, Joe; I'm sure that your family loved it!
Great video. We will try this.

Giovanna!! Ken from Star -- just found your video trove, here, and I'm clearly going to have to investigate these. Thank you so much; the whole array of your videos looks amazing!
Hi Ken, this is Star Island week. I heard from Carole and Ralph, Betty O., Lynne, and Howard and I attended a Memorial Service for Emma Lou Louis on Zoom.
Thank you, Ken, I really enjoyed hearing from you! Stay in touch.
Those look fabulous. Thankyou
I want to make this for Christmas eve but I live far from an Italian deli! Can I use grocery store Ricotta? My husband is 100% Sicilian heritage and I'm always happy to find new recipes from there!
