Well besides the name of these two regions , the thing which actually differs in these two regions is the culture as the cultural development in these two regions happened independent of each other. The main reason was geography as in mountains things propagate very slowly and other is the animosity and rivalry between the rulers of these regions ie Chand and Panwar.
During the Chand rule Kumaon turned towards extreme Brahamanical ritualistic culture and shed its Khas Shamanistic traditions(but still not completely ) hence you find various aspects of kumaoni culture which are completely absent in Garhwal like Kumaoni Holi , Smarta Karmakand (this aspect is very different), Poojas like Saatoo Aatho ,Harela, Aipan culture , Pichod , dashyaar , even the way women dress up (the seedha palla from plains) etc.
Kumaon also came up with intra Brahmin hierarchy called as Chauthani Vyavastha which is not there any more but still there is thul dhwat , nan dhwat as legacy.
This is what makes Uttarakhand beautiful , various pahadi communities living side by side maintaining there unique and distinct culture.
My mom is gadhwali my father is kumauni and me complete "PAHADI HINDU INDIAN"
