    (If you are using a different size of cake pan then adjust the baking time accordingly. For example with a bigger wider pan will need less baking time)

    1 + 1/2 Cup (225 g) All Purpose flour (PLEASE NOTE - This is the correct quantity of the All Purpose Flour - The cup quantity measurement that I have provided in the video is incorrect)
    2 Teaspoon Baking powder
    1/4 Teaspoon Baking Soda
    1/8 Teaspoon Salt
    1 Teaspoon Ground Cinnamon
    1 Teaspoon Ground Nutmeg
    1 Teaspoon Ground Cloves
    1 Cup (250 ml) Almond Milk OR regular Milk for non-vegans
    3/4 Cup (175 ml) Olive Oil OR Oil of Choice OR melted coconut Oil OR melted butter (for non vegans)
    1 Cup (200g) Coconut Palm Sugar OR Dark Brown Sugar
    2 Tablespoon Ground Flaxseed
    2 Tablespoon Lemon Juice
    Zest of 2 Lemons OR Oranges
    ▶️ Dried Fruits & Nuts:
    1/2 Cup (70 g) Ground Almonds OR Almond flour
    1 Cup (150 g) Dates (Finely chopped)
    1/2 Cup (100 g) Raisins (Finely chopped)
    1/2 Cup (100 g) Candied Fruits & Peels OR Tutti Frutti (Optional) (finely chopped)
    1/2 Cup (50 g) Walnuts (Finely chopped)
    1/2 Cup (50 g) Cashew Nuts (Finely chopped)

    I made this twice using raisins and sultanas as our preferred fruit.. It's utterly delicious! With a little trepidation I wondered how it would turn out if I used an equal measure of aquafaba instead of the oil. The only difference was that the cake was sticking to the sides of the tin. Next time I will line the whole tin with baking parchment. This is a wonderful recipe and I will make it again and again. Thankyou.

    Thanks!--looks really good, but as people do and you and other chefs must hear all the time: changes: I'll be omitting all the oil (subbing unsweetened applesauce), reducing the amount of cloves & nutmeg, and going to try letting the raisins macerate in rum before adding them to the mix.

      How'd it turn out? I like the applesauce instead of oil idea! I'd also add more kinds of dried fruit: figs, apricots, cranberries, candied ginger and I wonder if instead of 1.5 cups of normal flour, .5 cups each of buckwheat flour, chickpea flour, and whole wheat flour would work. Also, maybe blackstrap molasses instead of sugar?

      @@-johnny-deep- sweet of you to ask!-if I remember correctly it was fine but I just made it one time to revisit that kind of cake. Oat flour, green banana flour, almond flour, spelt flour, and all the ones you mentioned should work fine. And the sugar could come from maple syrup and dates too … l think you’d enjoy Chef AJ, Well Your World, Nutmeg Notebook, and Nini Girl, and many others. Cheers!

      @@kinalshah4891 I used standard mixed glutenfree flour. Added oat milk, pecan nuts instead of walnuts, less dates and raisins, and rhum at the end. It is really a great recipe, Will re-do it for Christmas

      Hi there. Using gf flour, did you change the quantity of baking powder and soda? Did you make a 1 to 1 substitution with gluten free four and used any other leavening. Did it rise and what was the crumb like. Will be making this but wanted to know what to expect. Would appreciate a reply.

    Hi awesome recipe looks great. Can't wait to try it. Just one question- can I use a little more alcohol- Rum instead of just 3 tablespoons? Can I also soak the fruits for a day and then use for extra Rum flavour? In that case would the temperature & time of baking change? Your advice will be of immense help.

    I baked this yesterday, and wish I had used my usual spices: the cloves overpowered everything else. Also it was a bit oily. I would use an oil that’s solid at room temperature next time.

      Cloves are so strong--glad you mentioned this! ... I don't use oil so am planning to sub unsweetened applesauce instead.

    Substitute apple sauce for the oil and leave out the alcohol for a "healthy" version (it's still loaded with nuts obviously which are an overt fat .. but hey, you're making a cake)
    Many people think alcohol "cooks off", but it doesn't do so significantly enough (do your own research online).

      @@TheOmRoom - for a different size pan you will have to adjust the time accordingly. Eg. A bigger pan than the one shown in the video may need less baking time.

      Ananya Rao - sure you can skip nutmeg if you want.... Or you can use pumpkin spice or five spice for this recipe.
