I'm sorry, but I'd never use this method. There is nothing to seal leakage of fluids that undoubtedly are going to leak from the stem of the flower you've just cut. This could easily ruin the taste of the cake for those getting a piece where flowers are inserted, and especially when you have a largeI quantity like in this example. Roses are a larger flower with a lot water and chlorophyll content. I'd much rather take the time it takes to wrap the stem. The way you keep the tape from slipping and make wrapping faster is sticking a piece of floral wire horizontally through the top stem of the flower, bending the two ends lengthwise down the stem. You then have a very sturdy surface and the floral tape adheres like glue to the wire.
Yes you can use fake flowers. Some of them are so well done they're very realistic looking. Then you don't have to wrap or go through any of this nonsense.
I like the idea of pealing the rose stem if need be

What happens when you want to cut the cake? It seems like it would be hard to remove those large straws without taking a lot of cake with it.
