It made me smile when you spoke of starting the meals and the instructions your mom left for you. My mother also worked so I started our dinners. When I married and moved across the country I realized that I knew how to prep for and begin many dishes, what I didn’t know was how to finish them and how to get everything on the table, finished, at the same time! Love the soup recipe, perfect for this time of year!

I'm glad to see cooking that involves two starches. There seems to be an aversion in some cultures to doing this. A reasonable portion, not overcooked, accompanied by lighter foods are fine. It won't sit in one's stomach like a brick or spike blood sugar.

I never freeze soup that has cooked potatoes in it. When thawed again they become watery and the texture is awful.
