Last Christmas I slow cooked my in the conventional oven. When it got to with in 15 - 20 degrees of MR, I pulled it, tented and let it cool for around 1 hr. Then fired up my oven. added extra seasoning and then finished it off in the wood oven for extra bark and flavor. It was very good indeed. Thanks for the video! I will try it this way soon I hope.
