    Eggplant/aubergine/ brinjal/baingan-1 (350 gm)
    Chopped onion-2(medium)
    Chopped tomato-1(large)
    Chopped green chilli-2
    Ginger garlic(grated/paste)-1 tsp
    Chopped coriander leaves-1/3 cup
    Asafoetida(hing)-1/4 tsp(optional)
    Cumin seeds-1/2 tsp
    Turmeric powder-1/3 tsp
    Red chilli powder-1/3 tsp
    Cumin powder-1/3 tsp
    Coriander powder-1/3 tsp
    Garam masala powder-1/2 tsp
    Salt to taste
    Cooking oil-4 tbsp

    Hello, I made this today and it was delicious. I roasted the eggplant on the oven instead of over a flame and that worked pretty well. I used a little bit more spice as well and put it over rice, but I wouldn't have known what spices to use without this video. Thank you for this video!

    I tried today.superb recipe. small tip sis.when you coat the baingan with little oil before roasting, you can peel off the skin very easily

    With this recipe I added frozen peas as my mother used to do and it turned out to be yummy....long live Kabitaji and indebted to you for sharing with us your expertise in the most simplest of way with clear and direct instructions...even though many of the masalas are not available here, a plus here and a minus there eventually ends up tasting good. Just need to follow the guidelines set by you

    Amateur cook here. This was the first time I cooked this brinjal. I know nothing about its cleaning or anything. Thanks for the tip of poking with fork to check whether it's cooked or not. You have no idea how much all such tiny details matter to us. It came out amazing. I was worried about the excessive chilli, but dad said it's in correct amount as brinjal tends to taste sweet (I didn't know that!) Quick dinner ready. 😘❤️

    I thought my recipe for this was the best since I got lots of appreciations before I saw yours. But your recipe was amazing... I did not use hing and dhaniya, jeera powder.... the rest was the same.... and the initial process to roast the brinjal was normal without putting garlic pods and green chilli inside ...... these little changes brought this amazing taste.... mind blowing.... love you mam...!! 😍😍😍❤❤❤❤

    Made it. Came out delicious. Thanks for sharing dear. I roasted the baigan in an oven at 450 F.for 20 minutes each side . I applied about one teaspoon oil all over the baigan , placed in baking tray lined with foil paper. Instead of roasting on gas.

      It takes only 10 minutes roasting in gas stove,all you have to do is just coat oil and you are good to go.

    A very genuine way of presenting, not missing minute yet important details. Two small clrfns ?
    1. Before roasting, many people rub the aubergine with oil. Comments pls on this practice ??
    2. Isn't it better to add salt immediately after adding tomatoes ??
    Apart from 2 benefits of slitting the aubergine, the 3rd benefit is that it will not suddenly burst ( यह पकाते समय फटेगा नहीं ). Thanks

    I tried this recipe today and it was absolutely delicious. I don’t have a gas stove so I just put the eggplant in the oven on broil. I’m looking forward to trying more of your recipes. Very easy to follow. Good work!

      बैंगन को roast करने के पहले little bit oil लगाके roast करेंगे tho उपर का छिलका easily निकल जाएगा. This is my suggestion only. Try.

    I made this yesterday and it turned out just like the ones I have in the restaurant. Super duper tasty!
    However, I roasted the Brinjal in our conventional oven.
