Professional candy maker Gerry gives us an inside look at the complicated art of creating sponge candy, a chocolate-coverage crunchy confection unique to the Buffalo area.

Does anyone know if there is a difference in cutting it when it cools completely, compared to waiting overnight?
no difference if you cut it the next morning or next year as long as it doesent absorb extra moisture from air.

don't let it sit in a hot car, the inside will melt and you won't know it until you bite into it.

For literally thousands of years we never wore disposable gloves or hair nets when making food without causing food-borne illnesses or chomping on random hairs, and most parts of the globe today still don't. You're young; if you want to grow old you'd better learn how to toughen up a bit more.
Every time I've gone to this one sandwich shop there is always a really long hair in there. I go elsewhere now.

Cadbury's actually takes their English chocolate and adds 20% more sugar for Canada and 30% for the U.S.
Try a Crunchie/Snickers/Mars bar, etc. from the UK and then one from North America. Not the same product.
And those dudes would be fired anywhere else for their food safety or lack of it. Unreal.
