Taiwan has a collection of food from all over the world aside from the local food, there are many japanese resto everywhere, foods from different parts of mainland china, mongolian and tibetan foods, famous southeast asian foods, indian subcontinental foods, and western cuisine apart from fast foods. If you are a vegetarian or vegan, there are many resto exclusively non-meat at local normal price.

You should definitely try black pepper bun (hujiao Bing), chicken butt on a stick and fried taro stuffed with salted egg yolk and dried pork floss... Oh and also bawan. For breakfast, try salty soy milk with the sesame bun and Chinese donut.
I love stinky tofu. I had a layover tour in Taipei🇹🇼 two years ago before continuing my flight to San Francisco🇺🇸. I almost thought about bringing some stinky tofu as my snack during the Taipei-San Francisco flight, but there might be some American passengers who might get upset because of the stinky smell.

Local night markets are the best; no crazy crowds whatsoever. Was in Taipei a few weeks and loved the lehua night market in new Taipei and was so much better than Raohe since it was so much easier to walk.
Most bitter thing i've drank was the water from boiled dandelions. My grandmother would pick them in the wild and boil / cook them. She kept the juice and put it in an apple juice container once that I took a huge drink from when I was little. Biggest shock of my life lol so bitter but also pretty healthy I guess
