I’m not sure I’ve seen any instructions to make the starter increase in grams while leave the water and flour the same through out. I like your method!
Yay! That’s so exciting! Absolutely you can do that, then pull it out of the fridge the night before, or a few hours before you know you want to bake. Then feed as normal 😊

My sourdough is ready to bake with but I’m not baking today. Do I just place it in the fridge without feeding?

I just started looking, but I’ve found lots of no-discard recipes on TH-cam for making and maintaining sourdough starter. Have you tried any of them?
No I haven’t! I like to keep a lot of discard. I do a lot of cooking and baking with it.
